The volume of ice is greater than the volume of water. Basically fill the water around 80% of the volume of the container for optimal size of ice.

My grandma had one of them metal ice trays (from her mom) and it works great, but I remember the metal handle was so cold and if your hands was wet, they would stick to it

I remember using an ice cube tray like that when I was a kid. They must've been made much better because we didn't have any problems. Loved seeing Luke and Hugo. If Gus was there I missed him somehow.

That style of ice cube great is what fridges from the 40s and 50s came with. My grandma had the ones that came in her 1950s vintage fridge. I think you filled it too full.
