Amazing as always! I first heard about pavlova as a kid when I read the book "Possum Magic". I remember that's also where I learned what lamingtons were. Perfect time to bust out the heavy cream I have in the fridge then for this dessert!

Hi! I made this using your recipe and it came out really well.. it had the crispy outer shell and marshmallowy inside.. made a passion fruit curd to put on it since we don't have berries where we live. Pavlova is actually one of the very first desserts I tried making way back when I first started baking! So delicious and crunchy yet soft and creamy on the inside! My favourite is topping it with raspberry or passion fruit coulis! Yum 😋😋😋

Hi Elaine. You will need fine sugar for this. Fine Sugar, castor sugar, or in the States, it’s the regular sugar you use for coffee. Fine sugar dissolves better into the meringue. Check the recipe for best results www.biggerbolderbaking.com/perfect-pavlova-how-to/
