I, two of my sisters, and a nephew visited Tokyo in 2015. We had a week and four sets of "I want to see these things," so none of us were able to see everything on our lists. We were too late for cherry blossoms, there were no sumo events that week, we didn't even think of trying for a geisha experience, and we all agreed to save Akihabara for another time. However both Disney parks, Kabukiza, and the Shibuya crossing (complete with viewing from Starbucks and then browsing manga & TCGs in the Tsutaya store) were accomplished. A select list of shrines and temples in the Tokyo metro area might be a good subject. We visited the Meiji Shrine, Sengaku-ji (where the 47 Ronin are buried), and Gotokuji Temple.

Honestly, I wouldn't recommend dinner with a geisha or kabuki for a first time visitor. It's often difficult to even gain access to dinner with a geisha unless you have the right connections. I'd also suggest doing this in Kyoto, rather than Tokyo. I also suspect the sort of person who enjoys Disneyland/sea isn't going to be the target audience for Kabuki. Also your film of Akihabara needs an update. Some of the buildings you show aren't there anymore.

They have traditional group experiences with a Geisha on sale with Viator & Trip Advisor.
