🥩 Beef Wellington Extravaganza: Join me as we master the art of creating a perfectly cooked fillet of beef, covered in layers of prosciutto and savory mushroom duxelles. But that's not all - we elevate it by incorporating the delicious taste of delicate crepes as an inner layer, offering an exquisite contrast of textures and flavors.
Elements
2 x 400 grams of beef fillet
Olive oil, for frying or butter
500 grams of mixed wild mushrooms, cleaned
1 sprig of thyme, mustard sauce
Beat 2 egg yolks with 1 tablespoon of water and a little salt
Sea salt and freshly ground black pepper
For the red wine sauce
2 tablespoons of olive oil
200 grams of beef (ask the butcher to reserve it when cutting the fillet)
4 large shallots, peeled and sliced
12 black peppercorns
1 bay leaf
1 sprig of thyme
A drop of red wine vinegar
1 x 750 ml bottle of red wine
Meat broth 750 ml. We make broccoli flavored crepes, a new and delicious flavor
Half a cup of all-purpose flour, two large eggs and half. A cup of broccoli and kale, 1/2 cup of milk and 1/4 cup of olive oil were eaten.

Wrap each piece of beef in three layers of foil to shape and also wrap around the meat with string, then refrigerate overnight. After 24 hours, take it out and apply mustard sauce and butter and place it again in the refrigerator for 12 to 24 hours. Remove the foil, then quickly sear the fillets in a hot pan with a little olive oil or butter for 30 to 60 seconds, until browned all over and rare in the middle. Remove from the pan and let cool.
Finely chop the mushrooms and add the onion and fry in a hot pan with a little olive oil, thyme leaves and some spices. Once the mushrooms begin to release their juices, continue cooking on high heat for 10 minutes to evaporate all excess moisture and leave you with a mushroom paste (known as doxel). Remove the Duxel from the pan and let it cool
Now we will make a new and delicious crepe with the taste of broccoli
Half a cup of all-purpose flour, two large eggs and half. A cup of broccoli and kale. Pour 1/1/2 cup of milk and 1/4 cup of olive oil into a food processor and mix well. Grease the pan a little and pour the ingredients into it. After cooking, fry the other side as well. Season the beef, then place them on top of the mushroom-covered crepe. Using foil, roll the crepe over the beef, then place it in the puff pastry and roll and seal the food in the foil to form a nice thick log. Repeat, then chill for at least 30 minutes. And make the extra dough into the desired shape and then spread it on the food to make it look better. Now apply the egg sauce on it according to the video
Meanwhile, make the red wine sauce. Heat the oil in a large pan, then fry the beef pieces for a few minutes until browned on all sides. Mix the shallots with pepper, onion and thyme seeds and continue cooking for about 5 minutes, stirring frequently until the shallots turn golden.
Pour in the vinegar and let it bubble for a few minutes until almost dry. Now add the wine and simmer until almost completely reduced. Add the cake batter and boil again. Reduce the heat and simmer slowly for 1 hour and remove all the sauce from the surface of the sauce until it reaches the desired consistency. Strain the liquid through a fine sieve lined with muslin. Check the seasoning and set aside.
When you're ready to cook the beef hookah, lightly crumble the pastry and brush again with egg, then bake at 200°C/Gas 6 for 15-20 minutes, until the pastry is golden and cooked through. Rest for 10 minutes before carving.
Meanwhile, reheat the sauce. Serve the beef wellingtons in slices with the sauce as a side.
