It is indeed a life saving hack for us in diaspora. Your kitchen is the best Laboratory ever. I am interested in the Almond egwusi soup. I know we eat pumpkin seeds as snacks too but i am not sure about making soup with it. Always looking forward to your videos! Thank you Flo.

Thanks for sharing Aunty flo. Collard greens is a great alternative to ugwu leave, here in the U.S. It has ugwu texture, although it’s has a very broad leave. Remove the big stalk in the middle of the leave, chop and cook with any swallow soup.

Thanks for these amazing hacks. I discovered mashed ripe avocado with added drops of lime juice as a perfect alternative to ube eji ata ọka (local pear that we eat with roasted corn). It works so well.

Kale is a better alternative for ugwu, while spinach is a good alternative for water leave. We use pounded yam flour as an alternative to coco yam

Great video and so helpful.. use kale vegetable as an alternative to ugu leaves, I use lentil seeds(legume) to cook moi moi as alternative to beans

I like your videos cos they are very inspiring. What I found out is that 1. Kale is a very good alternative for ugwu leaves but you need slice it like ugwu, wash with some salt and allow it to cook well cos it has a strong taste if it does not cook well. Swiss Chard is also good for efo riro, tastes better than kale. 2. To get the best taste and colour for that green pumpkin seeds, I'd advise you fry it a little bit before grinding it. I can assure you that the colour and taste is the same cos pepper and palm oil have mixed well with the pumpkin seeds. Thumbs up for your great job!

Thanks Flo, yes I agree with your substitutes but I have some alternatives. I use the cornflour you use for akamu also as a thicker for soups like bitter leaf and oha etc instead of oats. Just mix with a little cold water and add to the boiling soup my rating 8/10. Then I also use tinned butter beans as a substitute to cooked ukwa. I just add the usual ukwa ingredients (pepper, dry fish etc) to the mashed butter beans and enjoy. My rating for that is 7/10. I also use Irish potatoes to make yam porridge when I have no yam available it is a bit softer but my kids prefer it. We in diaspora just have to make do with what we have available. That is how new recipes are adopted/invented. The main thing is to keep our Nigerian recipes alive!

Ehe? Corn Flour as cocoyam? When I add it to sauces, it gives it a sort of sweet taste. Because of that 8/10 you gave it, I will try it with bitterleaf soup one day and hopefully confess. The butter beans hack is awesome. Even our ordinary beans (peeled) and cooked with dry fish and other ukwa ingredients tastes like ukwa. Yes o, we need to manage whatever we have where we live just to get even 10% of motherland taste. Thanks for the alternatives you shared.

Hi Flo, the tiny sesame seeds are called ridi (pronounced 'reedee') in many Plateau dialects or esa (pronounced eh sah) in Agila dialect in Benue state. Esa resembles egusi when ground and made into soup but does not cake as much. It also has a mildly bitter taste so i would not pair it with bitter leaf. My mum in law makes the perfect Esa soup. As an alternative to Egusi I will give it a 6 over 10.

Wow God bless you ma.. Where I live they have sunflower seeds and pumpkin seeds, I ve tried pumpkin seeds many times but I don’t like the taste but recently I washed it 4 times and I ground it with a water blender added red bell pepper and tomatoes nd onion to it and it taste just like egussi seed. I will try the sunflower seeds nd almonds next time . Nd yes I almost forgot to like the video until you said what are u waiting for , i then quickly hit the like button 🤣🤣 very funny

A wonderful video, I must say. Very enlightening👍. I do not like egusi, so I'm definitely gonna be trying out the alternatives. I was quite surprised when you said your alternative for ugwu and green is spinach, cos spinach is actually my substitute for waterleaf. I use it with kale for making vegetable soup, so yummy (I kinda prefer it to the real thing). I also combine it with okazi to make afang soup😋. In fact, I give spinach as waterleaf alternative a 10/10.

Nice video, I never knew about baking soda and hot water as an alternative for potash. For the pumpkin seeds, I grind in the blender into a puree, once ground the color is not dark like that. Try it, I prefer the taste of pumpkin seeds than sunflower. Almond is a new one, thanks for all the tips! See you next timeeeeee....😄

i agree. I made pumpkin seed "egos" yesterday and sunflower see "egos" today. I think the pumpkin see egos has a better flavor profile. Although i used less orisiris (smoke turkey/fish) for the sunflower soup today. Also the color does not show after the soup is done

Great value as usual. The second tip ( tomato in oil) is totally old school. It was the first thing my mom came up with as she’d had to improvise for A LOT of foods in the early ‘70s USA. I’m looking for alternatives to catfish since going kosher. I must eschew fish that doesn’t have both fins and scales. So I can still enjoy mackerel ( titus for my Nigerian peeps🇳🇬), tuna and tilapia for example. But since catfish lacks scales, I’ve had to call it quits on my “point and kill” until further notice 😭. Same with the eels, fins but no scales=no go. Any ideas, cousins???

Hello @Flo Chinyere, lovely video. For my little contribution....Kale is another alternative to Nigeria green/ ugu. It has a very very close texture to Nigeria green. Spinach is rather a closer match to Nigeria garden egg leaves (akwukwo añara in Igbo). You can eat spinach raw too and both have same taste and texture.

Thanks for this wonderful video, even in Nigeria we use Quaker oats as alternative to cocoyam.I live in Italy they have catfish which is known as il peace gatto.Check all those big store where they sellers fish in wholesale. I buy a carton of catfish for £19

I like the baking soda part. I think I will try it. The oat powder in soups is very true. Even back in Nigeria, my mum stopped using cocoyam many years ago to reduce starch content in soups. I too have been using it for years for all soups that need thickening.

I love this video! Thank you so much! I didn't know about quaker oats in bitterleaf soup. I'll give it a try. I love almonds, so I'll like to try it in egusi soup, and see how it turns out. I usually use baby spinach in place of water leaf, and I use kale or mature spinach leaves in place of ugu leaves.

Some use sesame seeds in place of egusi. I've seen it prepared in one or two blogs. Some others use groundnut which is readily available.

Thanks for this video it is an eye opener especially the palm oil alternative. Suggestion, why don't you try kale as alternative to ugwu it's so good and have similar texture, I haven't bought ugwu since I discovered it. We have cat fish in the UK though frozen but I enjoy using it a lot

Lol in the US catfish is one of the least expensive fish to be found and it's everywhere. In the southern states some people jump in the water and drag them out of their hiding places by hand 😂😂 no rod, reel, or net necessary.

I have used oats for years, and many other alternative u have here but i find Curly Kale as a good alternative for ugu and its great anti oxidant too so i use that a lot in my soups! Its found in local shops in Scotland where i live, please try it and lets know ur score for it?

I don't know what made me think oats were an alternative for Egusi. I bought quaker oats and was telling all my classmates I am going to try it, now I am seeing why they looked at me the way they did. 😐️

it's amazing how I knew many of these tricks. For the palm oil alternative I use a Latin American ingredient call achiote. I get it in powder and dissolve it in regular vegetable oil. The color is EXACTLY the same. It just doesn't have the taste.

I'm allergic to egusi (agushie to my fellow Ghanaians) but not to pumpkin seeds. Since the plants are all in the cucurbitae family, it does seem like a reasonable substitute! I might try it.

Thanks Aunt Flo,awesome tips.the eels are also nice when grilled in the oven and cooked in stews.taste like fried croaker fish /panla kinda.i don't like taking it boiled cos it reminds me so much of snake😂😂 Another hack is the potato flakes in stores used in making mashed potatoes,it makes almost perfect and stretchy poundo yam when added with a little bit of starch flour Also sago is tapioca sold back home and taro is just like cocoyam

Nice video, I don't have assess to ugu or waterleaf(ugu dry ones sometimes which is annoying) but spinach is a life saver I use ur for vegetable soup and it taste great. I miss my Nigerian vegetables by
