Your tips and Baking Technics are excellent; I have done everything you have suggested, and it has work to the dot every time! My sour dough bread turned brilliant, family loved it. I made my own Starter and with your step by step video, everything when right ! I commend you for such a great videos. I agree that you should write your own book, you got another buyer.

I've never heard about the Bain Marie in the sink before.. interesting! My sink is usually filled with dirty dishes but I'll give it a try. Also, it might be helpful to spell out the 5 tips in the video's description. Thanks

I've never baked from scratch before and I decided to make sourdough my first foray into the baking sciences. I'll be using your videos to help me along the way!
I live I Wisconsin so cold temps are always a doozy for sourdough bread making. Anyway, the oven pilot is my go to for proofing and bulk fermentation during the blistering cold months. I had to up the wattage a bit during the winter and it maintained the oven at 85°F(29°C)-95°F(35°C) but I will tell you I almost never turned that pilot light off all throughout the winter. I’ve heard of folks using their furnace room in their basement if you have that available to do.
When I made this video, I hadn't had much luck with the oven light method. Now I've got it to work though I use it as my go to method in the winter months. Just be careful not to go too high as I've found it creates a weaker dough more prone to spreading. Cheers Jo 👍
A book, Joachim ... you need to have a book!!! I'd most definitely purchase one ... even if it's paperback and no hard cover. Need a book. :) Also, I don't fully understand hydration and adjusting it. I'm not a fan of the large holes for the same reason ... butter melts through the holes. Anyway, I'm back to watch again.
