Edge sorting isn't possible because the "half moons" are slightly different on the 7s, 8s, and 9s (the reverse of all cards are identical). It's because the design of the reverse of ALL cards are slightly off center. This wouldn't matter if the cards were randomly shuffled. But if you rotate certain cards 180 degrees and not the others, then those cards that are rotated will have designs off center one way and the others off center the other way (in the shoe the "half moons" may be partly visible one way and not the other, aiding in recognizing which way the top card is oriented). Ivy's stratagem was getting the casino to agree to rotate those cards (perhaps better stated as to trick them to agree to it), and have someone with him who's eyesight is good enough to see this, as well as instruct the dealer in a foreign language the floor doesn't understand on how to put the spent cards in the discard tray so those cards stay oriented the desired way for the next shuffle (all of this done under the guise of being "superstitious"--casinos love players who are superstitious!). If the top card is a 7, 8, or 9, since the next card will be a ten about 4/13 times (other cards help too), the player knows they'll have a good number a large chunk of the time on the next hand and can make a higher wager those times (similar to a card counter betting more in blackjack when the count is favorable). I suppose Ivy could have also kept track of how many tens were already dealt to recognize when his odds of getting a ten on the second card were greater than 4/13, giving him a better bet and increasing his bet size accordingly.
