In order to make around 1,500 fresh fish balls and dumplings by hand daily, Uncle Ah Hua has been up from 4.30am - 10pm for the past 20 years.
How does he deal with his long 17-hour work days? Taking "happy hour" breaks, unwinding with friends over beer, and singing Andy Lau songs.
