I just found out about the host being upset about this video. I came here to support the host. He seems like a decent person who wants to share his passion of history with the world. Bain Marie (mixing bowl over a pot of water, no contact between the two). Seems like it would take longer than direct heat, but steam is conductive so while the heat is less intense than a source like fire, it transfers better, faster. Stir the whole time, focusing on scraping/moving the custard on the floor of the bowl. If using a wooden spoon, less rounded is better, you want to be able to scrape effectively, actually a silicon spatula is best (most rubber is fine at these temperatures also). A whisk can achieve this too, though this will incorp a little air into the mix, up to you how you feel about that. The time will lessen the more surface area to mass you have, i.e. A large bowl over a large pot with a small quantity of custard will be very fast, a small bowl for a large quantity will be very slow. Caution when removing the bowl from pot, the initial released steam will be intense and can scold you. Use tea-towels or something

Made the orange fool yesterday...and it made a fool out of me. Life lesson: never stop stirring while the custard is cooking or it will go from velvety to curdled and you'll have orange scrambled eggs. Stay at your post and stir, stir, stir! All was not lost, however: I took the scrambled mess, added more nutmeg (!), beat it to break up the pieces into what resembled wet cornmeal, made up a pie crust, poured it in, and baked it. The result was tasty and all the eggs, oranges and cream were not wasted.

I'm English, and we still make fool nowadays. My mum commonly makes what we could call "fool" as a dessert in the summertime by folding whipped cream into a pureed stewed fruit (like raspberries, strawberries etc). If you add broken up pieces of meringue you get a recipe we call "Eton mess".

it's become a bit of a running gag with the channel, but nutmeg was indeed a big part of various european groups cuisines at the time and they brought that over with them in colonial times. The joke has been made that the reason the british went out and conquered so much of the world was because their foods had no flavor, and they needed all the spices they could find to make it palatable, and still boiled most of it to death anyway. Nutmeg is still a big part of many european cuisines, especially slavic and germanic traditional dishes, its even called for in some cabbage roll recipes and a lot of both sweet and savory dishes you wouldn't expect it to be in.

What's really funny is that it both tastes pretty yegh at such quantities and it's also mentioned as a really bad choice for an "over the counter" psychedelic, because it's very easy to overdose on nutmeg, since it becomes toxic at dosages only marginally higher than those required for the psychedelic effects to occur.

I have smoked nutmeg before out of curiosity, definitely not worth it, tastes terrible smells terrible as it burns, the effect is similar to feeling like a retarded brick on a couch and will leave with a headache. I bet someones gonna go try it now anyway.

When cooling, you can just use a mixer on low and submerge the pot/bowl in cold water to speed the process. That's what I do. Otherwise I use the cling-film trick to stop custard getting a skin on top (or I eat the skin as a "cook's perk" lol). Modern custard recipes take less time and the principles are transferable to this type of fruit fool

A good sub for Seville oranges if you can't find them is two oranges plus a lime = 2 Seville oranges. Also, you can do any number of fruit fools - mashed raspberry is particularly good, as is mashed strawberry (cut the sugar if the fruit is sweeter).

Valencia oranges are not as sour as Seville oranges. My family has been in the orange-growing business in California for over 60 years, and we grow Valencia oranges for making orange juice. They can be as sweet as navel oranges, but we grow navel oranges for eating. Sometimes you can find bottles of Seville orange juice in certain Latin American grocery stores; that's where I bought a bottle of it a few months ago.

In a modern kitchen, you can place it in a double boiler and keep stirring until the custard thickens up. Then cool it in cold/ice water to keep it from overcooking. Given that cream is used and with the methods seen, I would think it is also possible Orange Fool can be turned in a Orange Semifreddo by preparing it as usual, but separate the cream. After the custard is made and cooled down, whip the heavy cream until thick, then pour and fold the custard until well incorporated. Then poured into a container and freeze it for 8 hours. If done right, you should have an orange custard-like ice cream that's great as a dessert in the summer months.

John, I have used your videos to help the homeless! They suffer from many different reasons for their state. Some of them have enjoyed your cooking video, the soldier cooking is very close to some, of how they live every day. A fool is an English dessert. Traditionally, fruit fool is made by folding pureed stewed fruit (classically gooseberries) into sweet custard. Thanks for that; I love language and etymology and origins of things. I have a modern recipe for gooseberry fools that uses whipped cream, yoghurt and gelatin. (I always use creamy yoghurt.) I always thought that must be a rather modern way of doing things, but in a life filled with lots of interests never found the time to look up the original way of making them. It makes me wonder when exactly that change occurred. Funnily enough, the custard method, while it might take longer, looks like it might create less dirty dishes in the process... which does go hand in hand with what I know of historic cooking vs modern cooking now thanks to the Townsends' videos!

My mother had two gooseberry bushes when I was young. My little hand were full of holes from picking them, but the foole was worth it. A once a year treat . Most of the berries going to jelly. This orange foole seams a little thinner than our gooseberry one. As I remember it was a custard folded with whipped cream, delicate ,but not liquids at all.

Just some introspection here. While watching this, it struck me that, today is an amazing age. Between the sugar, orange juice, cinnamon, etc., this would have been a dessert that would have only been for the very rich. The average American today would have everything available in their kitchens, with the exception of the fresh orange juice, and possibly the cream. .We live in an amazing age.

Thought about this and decided to go find some prices. There's a resource at babel.hathitrust.org/cgi/pt?id=hvd.32044050806330;view=1up;seq=157 Looks like around roughly 1800, nutmegs (their usage) were a bit less than ten cents each, fifty cents an ounce, or $5 a pound. Pepper was fifty cents a pound, mace 75 cents an ounce, cloves 0.17/oz, cinnamon ~0.10/oz, cassia likely a bit less than 0.40/lb, ginger 0.25/lb, mustard ~0.45/lb.

They lived a life of hard work, without vacuum cleaners, dish and clothes washers, they worked the land, made everything by hand. They weren't couch potatos who spent 8 hours a day at a desk to come home to watch TV/play video games/on their phones. They were very fit for their daily life activities. You can see the same in rural life in places outside of the Western world

The recipe for the orange julius apparently originally called for milk or cream and vanilla in it before they started shipping it standardized and pretending it was a mystery, so I wouldn't be surprised if they were inspired by a similar recipe. The recipe I have from the 70's actually suggests using frozen concentrated orange juice partially thawed because it is more bitter than regular fresh oj and makes it closer to the actual shop flavor, and adding sugar, vanilla, milk, water, and chunked ice then blending it into a frothy slurry. (the 70's used such wonderful language for cooking, chunks and slurries and moulded salads everywhere. btw, do not google 70's moulded salads, ever, it is a part of culinary history best left forgotten. so many things in lime jello that should never be served suspended in lime jello X_X )

That's nothing, I worked in the Jello factory in the seventies, we made tomato flavor and celery flavor Jello in summer, especially for making Jello salads. They only lasted a few years.

I think you're confused about history if you think people are more out of touch with history now than they used to be. Nobody used to give a crap about history, because they were too busy doing hard labour all day to try to avoid dying. Caring about history is, like many things, a luxury for the rich.

I also wound up here from the frustrated video, looking for the silly politicos. Jeez. Even if I had seen this when it was done, I think making a political connection would be a stretch. If, for any reason, the political climate and rhetoric had brought anything to mind, I would have dismissed it as an innocent coincidence. Your videos are pretty wonderful, and your zeal for your mission is inspirational, and anything that can bring together, people of all different inclinations, mindsets, and worldviews, with nothing to make any feel unwelcome, has to be a good thing. The nutmeg fixation is probably historical, nutmeg was rare and very valuable in the 17th Century by the 18th it was becoming more available but still a little touch of luxury in a dish. Just how valuable it was thought to be can be judged by the Dutch thinking that a small island in the Indonesia covered in nutmeg trees was fair exchange for New York.

I considered myself some what political - what event could possibly be associated with Orange (I assume hose of orange, but current US president could be a possibility) and July 3rd and in any way associated with the content of the video? After watching the July 6th video and reading dozens of comments I am just not understanding the fuss? ... Very curios as to what some one could have possibly seen... Pondering on it is driving me a bit nuts... What were they complaining about?

MySQL someone felt that it was disrespectful of the POTUS but it was clearly a knee jerk reaction. It was clearly not the intent of the video or of the name. I would have been the first to be upset if that had been the case but the Townsends would never disrespect our President. They have too much respect for our history to ever do that.

John, I am commenting under my spouses name as I do not face book, my preference. Anyways, I am a middle 18th century reenactor and have purchased items over the years from your online store and catalog to help fill out my kit. While surfing on you tube this morning, 2-3-18, I stumbled upon your videos on 18th century cooking. I had no idea you were doing these, what a jewel and so informative, both in techniques and historical content. I have watched a number of vids on other subjects too, and have learned so much already in just a short time. Only a few people have the gift to teach and instruct without letting ego get the better and you my friend are certainly one of the few. Mark Baker, Dave Canterbury too name two that have that rabbi mentality such as you do. I like the way you choose do this in time period clothing, it helps to put it in perspective. Just found the Mount Vernon series - such a treat to get to "visit" historic places! Most web searches on "fool" desserts say that the origin of the word is lost, but Epicurious links it to the French word "fouler" (pronounced foo-leh), which means "to press." Most "fool" dessert recipes I have seen appear to be pureed fruit with custard, so the "pressed" reference makes sense.

When I was a child growing up in Virginia, people from old Virginia families still occasionally made Fools and Syllabubs. Having said that, they were viewed as old-style dishes more for special events than regular desserts. Fools were cooked if I require correctly, but Syllabubs were not. Also, often Syllabubs had alcohol in them. Thanks for making this video and bringing back some memories.
