During Colonial times, shrubs were a very popular means of preserving fresh produce, usually berries, using vinegar or sometimes a spirit such as rum. Vinegar-based shrubs can provide a delicious and refreshing nonalcoholic drink option too.
The American version of the shrub has its origin in 17th century England where vinegar was used as an alternative to citrus juices in the preservation of berries and other fruits for the off-season. Fruit preserves made in this fashion were themselves known as shrubs and the practice carried over to Colonial America. By the 19th century ( post Civil War and during) typical American recipes for shrubs and vinegars poured over fruit and left to infuse anywhere from overnight up to several days, where popular. The fruit would be strained out and the remaining liquid would be mixed with a sweetener such as sugar or honey and then reduced to make a syrup.

I know this is an old video, but I wanted to share what I discovered about how to make a "Shrub Soda" to replace sodas. Hopefully, y'all may come across this. I love the fizzy drinks, but they are nothing but chemicals and HFCS. I saw the recipe for making Shrub and I always have Water Kefir on hand so I combined my Strawberry Shrub with my Water Kefir to make a delicious strawberry soda! It quenches my thirst and craving for fizzy sodas and the fizz is all natural. Even my sister, who hated vinegary drinks loved this drink and it helped her wean off of sodas. I put a third of my 16 oz. glass with the shrub and the rest with water kefir and stirred to mix it. Give it a try if you are like me and love fizzy drinks!

Wow that sounds delicious yeah the apple cider vinegar is a little harsh on my throat for some reason thats why I ask Stacy if she could possibly do a video using the kefir water instead of vinegar Thats all I drink no more sodas I have my adult children making kefir water also and I give kefir grains away I have so many

@@michellebaker4536 Hi Michelle kefir water is made with these gel like grains there you use mason jars quart size fill will filtered water add 1/4 raw cane sugar and a pinch of salt stir use a rubber spatula Add 1/4 kefir grains to water sugar mixture. Then cover jar with cloth and put jar lid ring over it to secure it leave on counter for 3 days Then strain liquid into a mesh strainer and pour kefir water into a flip top bottle and you can flavor with whatever flavor you like puree blackberries and put some puree into kefir water in bottle then latch close let sit on counter for 2 days it builds up a carbonation Once ready open in sink so it doesn't spray you FYI buy your bottles on Amazon not from target or Walmart those ones will explode and glass and liquid go everywhere in the kitchen its a mess. You can buy kefir grains off Amazon also The grains you just strained you use to start the new fermenting so follow the steps I gave you these grains will multiply and then you can make more jars of kefir water Where do you live I would have to see how or if I can send you some if you don't live here in California its best just to order them from Amazon I hope this helps explain everything to what kefir water is and how it is made no seeds

One part fruit One part raw honey One part Apple cider vinegar Smash up fruit to get juice out Add remaining ingredients Put on lid and shake. Shake everyday for 3-4 days (May keep in fridge) Strain it out and put juice in jar When you go to drink it add a couple tablespoons of juice and the rest with sparkling water. May also add ginger, cinnamon etc..

Perfect timing to see this as I want to have an alternative drink to wine and soda for me and juice for my husband. I made this with blueberries, and like another person, don't have chickens (and am waaay frugal) -- so I blended it all in the Vitamix (no straining of fruit) and THIS STUFF IS AMAZING!!!! Sold completely on it. Making a peach one this afternoon with some freshly harvested peaches!! Thanks Stacy!

Momma used to make us a drink what we called a "fizzy". It was just apple cider vinegar,water, sugar, and a 1/2tsp of baking soda. We loved it. This would even be better.

Hello Doug and Stacey, love love love your program and watch all the time, thx.! So the shrub , well, I live in Japan and it's a traditional drink here too. People use various vinegars, apple cider or rice depending on your taste, the most common sweetener to use is rock sugar (not the healthiest option, I know! I mix honey and sugar), and fruits used are your choice of seasonal fruit. I love using purple grapes! As you said , it's just left on the counter for as long as it takes to drink it all. Mine has now been sitting out for about a year and a half and it just keeps getting better (I made a huge jar). I like to drink mine with regular water because it has a lot of bite on it's own without adding extra fizz. Thx you guys! ;)

This is great!! I just finished off a bottle of elderberry cough syrup ( ingedients: eldeberries, acv, honey) tonight. Had a little left in the bottle and thought " hey, why not add this to some mineral water ". It was wonderful! I'll definitely be making a batch!!

Hi, from Minnesota. I just watched/listen to this video for the forth time, Just wanted to share how I tweaked the shrub "Lol....." I use half the honey and good inch of ginger and put it in my juicer/blender so I don't Have to throw the berries. 😁 First time I did and felt bad lol... I don't have chickens or pigs lol.. I have been making kombucha for about 3 months now and love it! As I was running low on the Booch and waiting on my brew, I decided to give this a try... AMAZING! I used 100% pomegranate juice, Braggs and honey. Then a lemon sparkling water. I'm hooked!

I have never heard of a shrub drink before. It sounds really good. I love how it is only 3 ingredients but you can do so many variations or flavors. I also love that it has many health benefits

about the molasses - I grew up with molasses in my milk!! It IS an acquired taste! but no one ever stole my thermos drink! LOL Thank you! We were looking for a soda alternative that was more natural/historical and was easy to make instead of the machines that require you to always be buying their CO2 canisters. THANK YOU!! cheers!!

Saw this video a while back and had this on my radar to make. Just made last week and tried it today! Used Aronia berries, honey and Braggs ACV. Good stuff! Sometimes I add black beans to my fermented fruit and bake it with some cinnamon. It's amazing! Also, Balsamic vinegar is different...my blood type likes it better. And I just want to say how much I love your outdoor kitchen! It's bright and cheerful!

I always say to myself "this is so simple, why haven't I done it yet". Well I made this today with some blueberries and it turned out so yummy. I added molasses and honey to give it a tangy/ Carmel flavor. I can't wait to try it when it sits out for a few days!!

Am trying to get off drinking pop. This looks so good for a person to drink, that I am going to make this. Hopefully, this shrub will replace the pop permanently. As a couple, there is so much wisdom, fun, video's and teaching. Keep up the great work, for we are better for it.

We have some yummy grapes that are ready for picking. I think we'll try grape shrub! Our son get Bragg's ACV drinks all the time. He should love this.

Yeah, while back in 2015 I learned how to make the shrub through Mrs. Wranglerstar from her hubby's channel 'Wranglerstar' and she coincides in the same info' on the 1 part sweetener, 1 part vinegar(of your choice but we know acv is the best!)and 1 part fruit, she used refined white sugar, I use granulated cane sugar(a light brown color), she used blackberries, i prefer raspberries but she put some lemon rind in with the shrub. What she didn't do,was mash the fruit in the jar like Stacy did, no having to cleanup extra dish, using honey is more easier because it incorporates easier with the fruit than the sugar does and while she recommended 15 to 20 days let ferment in a cool, dark place, I've gone 2 to 3 months outside and no wonder, the shrub's just as great tasting, even better than at the 20 day period. Thank,you! I am planning to make one (experimental) without apple vinegar. First, I cover the strawberries with sugar, in a jar and let them rest for 2 days, well covered. At the same time, I make a jar of grated ginger water kefir... That is water, 3 spoonfuls of sugar, half a lemon and 3 spoonfuls of kefir grains. Also let them rest covered for 2 days. For the second fermentation, I mix both strained liquids. And let rest for at least 2 more days. This, if all goes as expected, I am going to call the primitive strawberry shrub. And of course, I'll comment.

I'm so late haha But your alternative with the kefir grains sounds great! I don't like the taste of acv, kefir has a lot of good probiotics in it as well! So still getting something good for the gut & tastes yummy!

Sorry for making you wait so long for my comments... It was not as tasty as expected... Normally, I prefer to do the kefir just with oranges, as they preserve much more taste than the strawberries...

Since watching your shows I have been making kefir milk & water (I use 3.25%) milk, Kombucha & now Jun... now another drink. Thank you so much I have been feeling much better.

I love you recipes but I LOVE the outdoor kitchen. I tried all the variations of the switchel. My favorite was the syrup and least favorite was with molasses. Honey is better in switchel with a cinnamon stick!

Neat ! (Now I don't have to feel odd admitting I enjoy drinking the remains of the liquor left in jars of pickled beetroot diluted with remains of the syrup from canned fruit. Hubby can't understand why I want to keep what he'd rather discard (he's diabetic)!! Its counterintuitive but I find such naturally-acidic beverages combat symptoms of indigestion from acid reflux.

What's with people not liking the taste of molasses. I can still see Dad, in my mind's eye, wiping up a platter of molasses with homemade bread and butter, said it built his blood up. Just did search, Dad was right, BlackStrap Molasses, only need a spoonful "contains high concentrations of vitamins and minerals. It is rich in iron " We also made molasses raisin filled cookies and Dad liked the molasses/vinegar/ginger Switchel to quench the thirst

Looks so good. Can't get my hubby to drink the acv in water or hay makers punch (kids and I love both, act is the new lemonade at our house:) I will have to make this, not tell him it has acv in it, and see what he thinks:)

So the wife juices every day. Just saved us from a bought of food poison. Thank God for activated charcoal. Her Beet juice recipe revived us. Think we might try this with some of the juices.

That's interesting name for this drink it might have some origins in Arab culture. The word "Sure-rub" in Arabic means drink. Nice channel and videos we learn a lot from you and watch you a lot

Great idea…. I'm trying! Questions - 1) Does this drink REQUIRE a sugar, -for safety or fermentation, or could I use stevia to sweeten? 2) If using stevia, would I need to place mixture in frig while waiting the three days? 3) When using a natural sweetener, is it used up in the process of the three days? 4) I DO have electricity, so is there any reason I could not place my fruit into my vita mix to make my fruit juice/berry mix for this drink instead of mashing the fruit? Thanks, guys!

Yes, you need sugar for fermentation. Stevia is a great sweetener alternative for other things (kefir or tea, for example) but doesn't provide whatever is necessary to ferment. Like making vinegar, wine, kombucha, etc. the sugar content goes down with time. After 3 days there will still be sugar in it. If you go longer you may risk mold, or it turning to vinegar.

I have some fresh pomegranate juice. Could I skip the fruit mashing step and just mix it 1:1:1 (juice/sweetener/ACV) or is there something about the fruit pulp that is important to this process?

Great vid and recipe. One thing as a suggestion. Honey: if you use pasteurized (heated) honey you are losing your honey health benefits. Use ONLY raw honey. Doesn't have to have the wax on it but it can't be heated. Heat destroys the beneficial organisms the bees worked so hard to impart to raw honey and then you lose the benefits too. As a general rule (not always) when using sweeteners, only use the sweets that have some of the original organic bases the sweetener came from. Cane sugar with some molasses color (fiber + minerals), coconut flower sugar, green stevia (green-the whole plant), etc. Hope this helps.
