Oooh, hybrid BBQ and Traditional - definitely going to give this a go!! It would be great to see a video on "cooking for freezing" - and by that I mean cooking in bulk to maximise pit utilisation and then best ways of storing and reheating without turning the meat to mush. Being able to just reheat a rack of ribs for an hour or so any time I want a delicious meal would be great! That and my pit is a disaster zone and takes a lot of babying, so reducing that would be amazing haha.

Shes retired Chef from her restaurant and loves seeing some of the things she use to make but with a BBQ twist... whenever a new vid comes up I start it and the wife is "ohh good, we can find out if he cought that peskey snake..." been watching you for a couple days....think around 275 subs.... keep it up, you are doing great stuff. and those that know..... know.... Another great video Brad. Enjoying my Chud Chimney and magic trivet, quality merch. It has been a while since you did this. Just a thought to change it up from time to time.... Once the dish is finished coordinate w/ Brooke and friends to be there and let them taste test. I know it would be a effort to get them there together but I think it would be a great end. Keep up the great work man.

I made this last fall (not smoked) - As delicious as it was, it took me the better part of a whole day - I won't make "that" recipe again - I'm sure there's a better way. There is little that can match the flavor, fullness, and texture of this dish - Thanks! - Cheers!

Can we see your BBQ version of other "traditional" dishes? I'd love to see a smoked Lasagna with brisket instead of ground beef.... unless you can smoke ground beef?

That looks very hearty, a nice twist on a classic dish. In the UK not heard of Denver steak, I guess it is blade, a good choice. I am not convinced that beef dripping, as we call it over here, is improved by being Wagyu though. I might be wrong.

Do you cool your meat prior to the vacuum chamber? The hot vapors and oils worry me, as well as the pliable meat inflating during vacuum.

Great show Robinson. Never thought to smoke a beef stew. Can't wait for better weather here in the Pacific northwest. And you've gotta have the fastest knife west of the Mississippi. 😂 Just ordered some more hog casings off your link. Planning to make andule and have to look and see if you've done a video on it. Also if you've made one on smoking rattlesnake. I had smoked rattlesnake chili on a ranch in Montana were I did some cowboy sh%# all day for a couple months. Damn good chili.
