A new trend: Tinned fish

Tinned fish, like sardines and anchovies, has always been more common in Europe than the U.S. But last year sales of tinned fish in the States rose to $2.7 billion, largely driven by young consumers. Correspondent Luke Burbank talks with Becca Millstein, founder of Fishwife, which sells carefully-packaged, sustainably-harvested seafood; and with Anna Hezel, author of the cookbook "Tin to Table," about the growing popularity of tinned fish.

Once something becomes "trendy" in the US, you can charge whatever you want. People are buying the story, not the product.

Well the cool thing is just like wine, there is a whole range of prices you can get. You can have your every day affordable ones you might dress up or use in a recipe and then you might pay a bit extra for something less common that you eat straight. You don't have to spend a lot to get something good, but if you can have a really good experience doing it if you want.

I once ordered the sardines from a famous seafood restaurant in Baltimore, MD. I was surprised to get a tiny plate with literally a can of opened sardines served to me. I admit, I was perplexed. But I tried them, cold. It was one of the yummiest seafood dishes I'd ever had. 👩‍🍳😙

Over a decade ago, my coworkers would leave the break room when I opened a can of sardines at lunch! It was just the "thought" because the smell wasn't actually there. Tinned fish is great to have on hand for unexpected power outages, extended power outages, and in regular rotation otherwise. I learned to love sardines when a hurricane was heading to south Florida and the grocery stores shelves of canned meats, tuna, and chicken were left with only sardines. The hurricane hit, power was out for five days, and sardines? Was so glad to have them!

Don't kid yourself they have been a cheap eat staple for hundreds of years here as well. Brands like Beach Cliff and King Oscar are now being made upscale with buzzwords by Millennials and Gen Zers. Kind of stupid how you slap the words locally sourced, freshly packed, gluten-free, sustainably harvested then throw weird ingredients into the mix like avocado oil into the mix and people will pay $15 to $20 more than a old school brand that has been selling the same thing for nearly 200 years.

I wouldn't say to avoid skinless/boneless entirely, but they're definitely dry compared to skin intact. You might think that's weird since they're bathing in oil or water, but you'll definitely get a drier fish in the mouth as you eat. Not to mention skin and bone provide extra nutrients as well and unlike bigger fresh fish, the skin and bones in canned sardines don't really pop out too much since they're already pretty brittle and soft.

I'm no fan of sardines, but love kipper snacks(smoked herring). If you want to have emergency food on hand, whether that emergency be a refrigerator out of everything but condiments or a choose-your-holocaust event, a single can will give you enough protein for a day. Bought by the case, they're cheap and stack nicely in very little space. Plus they taste good. As good as or better than bacon with scrambled eggs, IMO. Just don't cook the eggs in the kipper's oils, or you get fishy eggs, which is not nice. Pour out the oil first and keep them separate. Also nice in a sandwich with mustard.
