This Norwegian dessert is one of the most amazing and easy to put together desserts I have ever tried, it is lush and delicate, also sweet and tart so overall and amazing elegant dessert for to accompany your dinners!
INGREDIENTS:
4 to 5 ripe apples
1 stick of cinnamon or half a teaspoon of powdered cinnamon
1/2 cup of water
1/4 cup of sugar
1 can full-fat coconut milk, cold
1/4 teaspoon of xanthan gum
2 cups of breadcrumbs,
1 cup of dried coconut, rolled oats, or crushed nuts
1/2 tablespoon of cinnamon powder
3 tablespoons of Demerara sugar
METHOD:
Peel and dice the apples and put them in water with one or 2 tablespoons of vinegar or lemon juice so they don’t get brown
Drain the apples, put them in a pot along with the water, the sugar, and the cinnamon, bring it to a boil, then to a simmer, and allow it to cook until the apples are soft. Set aside.
Place all the ingredients for the crumble into a baking tray. Mix it around and put it in the oven for 8 minutes at 180°C.
Add the full coconut milk can into a mixer and mix until it is thicker and looks like a meringue, if necessary, add about a quarter teaspoon of xanthan gum to help with the process
Wait until the apples and the crumbs or at room temperature; then assemble the dessert by adding layers of the three ingredients that we have just prepared.
Finish it with a mint leaf and serve it cold.
