This Norwegian dessert is one of the most amazing and easy to put together desserts I have ever tried, it is lush and delicate, also sweet and tart so overall and amazing elegant dessert for to accompany your dinners!
INGREDIENTS:
4 to 5 ripe apples
1 stick of cinnamon or half a teaspoon of powdered cinnamon
1/2 cup of water
1/4 cup of sugar
1 can full-fat coconut milk, cold
1/4 teaspoon of xanthan gum
2 cups of breadcrumbs,
1 cup of dried coconut, rolled oats, or crushed nuts
1/2 tablespoon of cinnamon powder
3 tablespoons of Demerara sugar
METHOD:
Peel and dice the apples and put them in water with one or 2 tablespoons of vinegar or lemon juice so they don’t get brown
Drain the apples, put them in a pot along with the water, the sugar, and the cinnamon, bring it to a boil, then to a simmer, and allow it to cook until the apples are soft. Set aside.
Place all the ingredients for the crumble into a baking tray. Mix it around and put it in the oven for 8 minutes at 180°C.
Add the full coconut milk can into a mixer and mix until it is thicker and looks like a meringue, if necessary, add about a quarter teaspoon of xanthan gum to help with the process
Wait until the apples and the crumbs or at room temperature; then assemble the dessert by adding layers of the three ingredients that we have just prepared.
Finish it with a mint leaf and serve it cold.

I still use my grandmother's hand mixer almost daily. Makes fluffy scrambled eggs. Thank you for these fabulous mostly gluten free, vegan recipes😊.

Tilslørte bondepiker - Veiled Farm Girls!!! Always soooo yummy!!! Unless you have way too much, LOL… Been there, done that etc. 😂 And when I was a kid, we always used the hand crank mixer called a «hjulvisp»! They’re still easy to find new online or used in thrift stores. When I have made whipped coconut cream, I have added a tiny bit of cream of tartar (in Norwegian «kremortartari» ask for it at a pharmacy or buy online), or lately I have used the Gryr brand «Matfløyel», which is coconut based cream meant for cooking or also whipping. It is soooo good!!! This version will be much better than the original with the heavy cow’s milk cream!!!😋

Do you know how really old that gadget is from the 1800s. My grandmother who was born in the 1800s had one of those who passed it down to my mother. I don't know what the heck happened to it when my mother passed 😥

This desert is normally made from dry leftover baked sweet goods, but the layers (veils) are more important than what sweet content (farmgirls) you put in it... Crushed ''Kavring'' is the original and official ingredient. Kavring is dried and crusty ''old'' sweet buns. Some use cruesli, others use loaf, or even crushed biscuits... The apples can be substituted with other fruits or berries, and the cream with merengue, custard or even yogurt.
