This yeast dough, made by the recipe from Moscow's "Metropol" restaurant is ideal for ovenbaked pirozhki (stuffed buns). Finely balanced and without yeasty aftertaste, fluffy, soft and rather light. It's not heavy or greasy, not too sweet and not too salty which is the reason why it goes well with any kind of filling.
INGREDIENTS
1kg premium wheat flour
125g sugar
23g salt
4 eggs c1 + 1 egg for greasing
400ml warm milk
20g dry yeast/60g live yeast
125g soft butter + melted butter for greasing
Bake in the preheated up to 180°С oven for 15-20min.
