I use a insta 360 telescopic stick mount and I put it into the water bladder pocket and let it stick up through the hole for the water tube. This has the advantage that I can reach behind me to turn the camera on and off and also to extend the pole. For safety I usually take off with it just above the top of the harness and then pull it up higher in flight. I push it back down again before landing in string winds so it can't foul the lines when I turn around. I also tie the bottom of the stick to the bladder or harness so it can't come out in flight.
The simple way is to use the replay function in XCTrack to replay the flight from the stored IGC file. Then record the android device screen as a video. Then overlay the video on your other footage and use Chroma Key to make the background transparent. I use ADB to record the video and save it to my desktop, but there are dedicated apps for recording your Android screen. I use Kdenlive video editor as it is powerful and free.

Nice, I'm doing my PG2 course in Manilla in may, I can't wait to fly. Do you use an external vario paired with your phone or are you just using the app?
I use the barometer in the phone for the 10 second average and I use a skydrop as my main fast response vario. I don't use bluetooth as the phone gps and baro work well enough on my galaxy phones.
