a simple carrot cake, How to make a good carrot cake
Ingredients: ( for 15 -18 people )
Eggs 5
Sugar 380 g
cooking oil 200 ml /200g
flour 270g
carrot 470g
Vanilla sugar 20g or3 tsp
Baking powder 3g
cinnamon 3-4 g
bicarbonate 3g
salt 3g
Glaze
Butter 80g
icing sugar 140g
cottage cheese 200g
Coconut flakes
saffron
The cake should be baked in a smaller tin so that it is a little taller. Made entirely of tin
Whisk eggs and sugar until fluffy.
Slowly whisk in the oil.
Mix all the dry ingredients and stir into the batter together with the carrots. Pour the batter into a greased tin and bake in a convection oven at 150 °C for approx. 30-35min. Let the cake cool.
Toppings:
Melt the butter and let cool. Mix the butter, icing sugar and Philadelphia cheese or cattog cheese into a glaze and spread on the cake when it
cooled down.
Allow to set in the fridge.
