Business Insider spoke with Angus Kennedy, editor of Kennedy's Confection magazine, about how to identify high-quality chocolate.
"Quite an easy way of checking chocolate - I’ve got two chocolate bars here - one is like a standard sort of milk chocolate, perhaps a sort of lower end type of chocolate and one is more higher end, higher cocoa butter, higher cocoa percentage."
"There’s a really sure way of doing this so what you do is you get a piece of your bar and you just snap it off."
"The higher quality chocolate tends to make a bit of a click and a harder noise because it doesn’t melt so quickly and it’s just got a bit less sugar got less vegetable fat in it and when you eat it, it should taste a little bit fruity because the cocoa bean is actually a very fruity product."

What I like about Mr. Kennedy based on this video compared to other specific food experts is that he doesn't act like the low-quality chocolate is made from the toe nail crust scraped off from between the hooves of the master of hell himself like other food experts do when asked to compare between low-quality versions and high quality versions of their food expertise.

I really like that the background music in this video was louder than the sound of the first chocolate bar snapping.... Honestly what is it lately with background music in Yt videos being louder than the actual content?!

I mean nice video but if you have already bought the chocolate there is no point. Also people don’t buy it for the quality they buy it for the taste.

taste and quality tend to go hand in hand though. although sometimes bad quality stuff can be much more enjoyable for sure!

Compared to what exactly is Lindt (the darker bar clearly is Lindt) a high quality chocolate? To American chocolate? Yeah well in the US sweets with a cocoa percentage of something like 5% are still allowed to be called chocolate whereas in Europe the minimum for it to be called chocolate is more than 20% percent cocoa content. Lindt is a supermarket level chocolate that is quite good in making advertisement that exaggerates their „excellence“. But amongst all the chocolate you could buy it is far below average. This person is not an expert or he was paid by big companies. Even Lindt knows there are bars out there with better quality. Lindt uses the cheap, fast growing cocoa, they use Vanillin and Soy lecitin. They even tell you that in their head quarter‘s exhibition. An expert should know about that. And he should tell you about bean to bar chocolate and about cocoa varieties and origins and he should know that a snap is not all that matters.

Except the chocolate "snap" isn't pleasant and I've never met anyone who likes it. It's better if it's softer.
