Meet Andrew Connole who, along with his father and brother, started baking bread in September 1998 in an abandoned bakery in the small NSW town of Bellata.
From these humble beginnings they have built one of the finest sourdough bakeries in the world.
"None of us were bakers and we were only following the dream of our father.."
The Sonoma Bakery story is about family, commitment, passion and a dedication to the craft of making world class sourdough.

I used to work in bakery and this is completely different and better that we used to do , no artificials and additives added . great job

if its all about the bread why did you go mass production? would you not get a better buzz if you were in a corner bakery and being a proper artisan and doing everything by hand.

When he couldn’t describe how a sourdough starter worked, he lost credibility. The boss either is oversimplifying or just doesn’t understand it at a very basic level. I noticed a few other moments of disconnect. I hope their community is inspired to explore and eat more healthy bread either way.

in case your eyes are shut every loaf is worked by hand as extensively as your little wife would do in the comfort of your home if you had such a wife , but with you poor attitude I would guess , Naaaaa......

What on earth are you on about...he just said 4000 loaves a day is mass production and he'd be correct. I've seen better artisan loaves than these to be honest. Great use of cheap Immigrant labour.

I make sourdough too, but let's not pretend sourdough leavening is natural but store-bought yeast is not.

But sourdough obviously IS natural? And commercial yeast is far less so.

How is commercial yeast less natural than the wild yeast found in the flour or in the air?

Because an industrial process to propagate, dry, granulate and package yeast is less 'natural' by every standard than the process of stirring flour and water and letting it sit.

jajajajajaja bueno tienes razon hay que tener pasiencia para usar la masa madre bueno te digo tendrias una mejor textura y un mejor acabado con la masa madre yo solo utilizo masa m para mis panes es muy bueno mira en esta seamana voy a tratar de subir un video de unos panes haber si tengo el tiempo te habiso cuando este en you tube

So much bs. You can't really control quality if it is coming off an assembly line. Why? You need to check the bread and see if it needs going back in. This is just another 'good enough' bakery.
