Anthony Bourdain's Seafood Stew
Serves 4-6
1 bottle dry red wine
1 tablespoon extra-virgin olive oil
1 green pepper, cut into ½-inch pieces
1 medium onion, cut into ½-inch pieces
7 to 8 garlic cloves, thinly sliced
1 tablespoon cumin
1 stem fresh oregano, leaves removed
1 teaspoon crushed red pepper flakes
4 large octopus tentacles, cut into ½-inch pieces
1 tablespoon tomato paste
1 (16-ounce) can crushed tomatoes
2 cups homemade octopus stock, or store-bought, low-sodium vegetable stock
2 Yukon Gold potatoes, cut into ½-inch pieces
2 cod fillets (7to 8 ounces each), cut into 1-inch pieces
12 little neck or top neck clams, scrubbed
Fine sea salt and freshly ground black pepper
French baguette, for serving
1. In a medium pot over medium heat, add wine. Simmer until wine is reduced by two-thirds.
2. Heat oil a large, high-sided skillet over medium-high heat. Add onion, green pepper, and garlic, and cook, stirring occasionally, until translucent, 3 to 4 minutes. Add cumin, oregano, and pepper flakes, and cook, stirring, until fragrant, about 1 minute. Add octopus pieces and cook until juices release, 1-2 minutes. Pour reduced wine into pan; scrape bottom of pan using a wooden spoon to dislodge any browned bits. Add the tomato paste and crushed tomatoes and enough of the octopus stock to cover by 1 inch; bring to a boil. Reduce heat, and add the potatoes; gently simmer until tender, about 45 minutes.
3. Add cod and clams, and cook, covered, until clams have opened, 10 to 15 minutes. Season with salt and pepper. Serve immediately, with bread alongside, or the following day...it's even better.

It’s crazy that I can feel so connected to a man I didn’t even know... Hearing about his death was something I was not expecting, he seemed to really love his life. Here’s to you Anthony, you gave a lot of yourself to us. I wish you would’ve gotten help and just taken some time off - but it’s not to be. I pray your at peace now being away from this rat race. The world is a little less bright without your witty humor, countless stories, and opinions. Thanks for all of the content that we can rewatch - you lived quite a bit in 61 years. Get some rest...

Eric Ripart is one of the few great, reputable chefs that sees the merits of veganism from a health/dietry and ethical standpoint. Hes says he is burdened by using animal products in his resturant and sources only ethically farmed animal produce, and as he mentioned in this video, he doesnt eat meat at home. The anti vegan propaganda amongst chefs is so dull and predictable and just deplorably irressponsible for the health and welfare of our planet and everyone that lives here!

And Azerbaijan's officials make it very hard for people to reenter the country once they have gone to Nagorno-Karabakh. Azerbaijan maintains a list - with more than 700 names - of people from all over the world who are no longer welcome. The list includes government officials, European Union members, journalists and activists. This week, one more name was added. Bourdain "has been put onto the persona non grata list for his disrespect of Azerbaijan's territorial integrity and sovereignty," Foreign Ministry spokesman Hikmet Hajiyev told Agence France-Presse. "Filming a food show on Azerbaijan's occupied territory is an insult to one million Azerbaijani refugees who were forcefully expelled from their homes.

I liked Anthony Bourdain and his tv programmes, however, I actually think he's a bit of a lost soul who doesn't make too much sense at times...maybe he realized it too!

This morning, I learned that Anthony Bourdain passed. I watched this video in his honor, as a sort of private memorial of a man that I esteemed. The news reported that Chef Eric found his friend, Anthony, unresponsive in a Paris Hotel. How terribly tragic, and what a deep loss Anthony's passing is for so many. I express respectful condolences to his family-especially his daughter and brother, but also to Chef Eric. It must have been terrible to find Anthony deceased. Like so many others, I will miss Anthony Bourdain, who was so multi-talented. What a sad day this is!

1:18 seeing Anthony as a young boy and his parents, that is heartbreaking, his mother is still alive, suicide deeply impacts the ones left behind, God Bless her through this tragic time, rest in peace Anthony Bourdain (1956 - 2018)

Really cool seeing these guys interact. A little bit of Yin and yang happening here - like all terrific friendships. Eric touches on the "real" bourdain. The camera never lies? Well, yeah it kinda does. Nobody knew the real T except himself, and that's the same for everyone. On camera, off camera. We never truly know our significant others. We get a glimpse, but never the whole story.

Suicide Doesn't Discriminate, such a sad and tragic loss...I loved watching Anthony, I never knew him personally but he seemed so talented and such a positive and genuine person... REST IN PEACE. 😪

He was talking about his past , wasn’t he slowly admitting that he could have done better also as a cook , was not he impressed by all the famous chefs though they were all worshipping him. He had an inferiority complex and thought he wasn’t t worth all this success. He loved friendship , wine and food , how did he stay so slim. A wonderful human being , his roots and America, his inner struggles and his huge honesty. A hippy who travelled the world , listen to what he is saying.

I dont consider him a hippy, hippies were a decade before. He did think himself an excellent chief, self deprecating to that point. I do not think he suicided, I think his deprecation of a powerful social and political cabal took him.

Eric is just an amazing guy. Anthony was too, but Eric is an incredible chef - one of the best ever in my opinion - and he's so humble about it. I love his personality.

Realistically Anthony probably should have been totally sober after rehab. Alcohol is a depressant. Who know what could have been. RIP Anthony. What a great friend Eric was.

I feel depressed every day even though I think about suicide every day depressing destroy your life all you think about is dying I take 7 deferent medicine I don’t feel better. Anthony was depressed and you can tell on his face but he couldn’t deal with the pain that comes with depression physical and emotional It’s hard no body understands what you go through day to day you have interest nothing feels good anymore .. I loved Anthony I watched all his episodes it’s very sad to do what he did we lost a very good man

Gotta be honest I tear up sometimes watching old Bourdain videos. I remember being so down and depressed as a teen and when I came home I’d watch No Reservations with my mom and we’d just live through him and imagine going to the different locations. of course he pulls you in with his great story telling and his real talk no bs attitude. He is missed. One of the few people on TV that I really wanted to meet in person.

So sad and sorry to hear he took his life. Disbelief set in. He must have received a terminal diagnosis and so he ended life on his terms. It appears I was wrong and depression played a roll. So sorry we lost him. Even more, so sorry his daughter lost him.

Go away he was his best friend and they adored each other dearly. He lost his best friend, he doesn’t had to suffer the stupid conspirationist theory of idiotic bigots like you who wants to see sandal and hidden truth in such a terrible event. Anthony never hid his past of ex drug addict and the fact he got jaded from all his relentless travels and the fame effects had on his so complexe mind. Suicide doesn’t warn and can’t get explained, It is a decision that belongs to the one who committed it and always remains a mystery and terrible thing to process, explain or understand for the closed ones who feel guilty for not having realized, seen or helped that person deal with a pain they couldn’t bear anymore in this life. Your small mind might not understand that and instead prefers believing in some sensationalist stuff, truth of the matter is suicide will always leave many clueless.
