My favorite Sicilian recipe is one you haven’t talked about yet. Caponata. I’ve made it several times and my whole family loves it. For pasta I like Pasta C’anciova. Anchovies, pine nuts, raisins, tomato paste, bread crumbs. These are both really funky tasting dishes, not what most people think of for Italian food. But incredible flavors. That pasta dish with the anchovies has an umami like I’ve never tasted before.

I spent a month in Palermo and loved the pasta alla Norma but one of the most interesting local dishes was pasta with sardines. It sounds similar to the pasta with anchovies mentioned above. It had bread crumbs and some sort of little black berries and maybe fennel. Such an interesting combination.

I've only had one grandmother in my life, she was Sicilian. I loved her as much as she loved me. The ladies in my family? Not so much 😂 she didn't believe in my learning to cook but I'm a curious person so she made the effort to teach me how her mother taught her. I am blessed 🙏

Those arancini look like heaven, and I'm definitely going to try the sfinci sometime. I will have to love the pasta alla Norma from afar as I am allergic to eggplant, but I remember how much I enjoyed it from back when I could eat it, and your version looks and sounds delightful. Perhaps I will try a version with zucchini. It won't be as good, but a pale substitute is better than nothing at all.

I saw a fascinating pasta video, but now I can't find it again! It was an Asian chef, and the concept seemed to be a hybrid of Spaghetti alla Carbonara and Spaghetti Aglio e Olio, with olive oil, garlic, pecorino, eggs, and guanciale, with a few other ingredients. The end result was the most golden garlic pasta I've ever seen, and I wish I could find it again, as I would love to see Vincenzo's reaction. I'd love to try it, it looked amazing.

I love Arancini. First time I had it was at Catania. I have made it since then. I bought the mould from Amazon to save time and arancini to look the same. I like your way and can not wait to try it. I loved this Video thank you Vincento and Robert. In Austria we make Sfinci too but they are called “gebackene Mäuse” [deep fried mice😅] and we serve them with vanilla pudding. I forgot all about them until this video. Thanks for giving me childhood memories guys

Vincenzo, sir, Have you ever heard of or made a dish called Spaghetti Arrabiata? I had it once many years ago when I was on holiday to the south of Italy. It was delicious, and if I had a recipe I would gladly try to make it. You are the best Italian chef I have found on RU-vid who makes videos in English, and my Italian is not anywhere good enough to understand what people are saying in Italian. It's a long shot request, but if you know it and can make a video on how wo make it, I would be forever in your debt. Thank you.

Vincenzo - I've made something similar to sfinci before, I believe with small bits of fresh apple, as well the raisins, and some cinnamon, maybe cardamom, but very close to the same thing, that were called 'Fritters', I believe. I don't think those recipes used ricotta, so, I'm gonna try that.

Hi Vincenzo, I have watched most of your videos and I love them. As a chef that has made a carere makeing new nordic cuisine I have little to none expertise in Italian cuisine except home cooking but i wonder why you don't mix the cheese with the meet because the meat is already cold. The cheese won't mealt and you will get an even distribution of the filling. Best regards, Fannar.

Vincenzo, have you ever heard of an arancini using cinnamon and sugar, or was that just the recipe of my eccentric Sicilian Zia Maria? The outside was dusted with a lite mixture of both, and the center, chop meat, sauce, pignoli nuts and raisins had cinnamon and sugar in it. I know, sounds strange, as in savory and sweet, but the whole thing worked beautifully. My mom continued to make it that way as well. I miss them both. Anyway, arrivederci Vincenzo.

If you can’t find ricotta salata, you can use feta cheese since regular ricotta is unsalted and most often made from cow or buffalo milk instead of cheep’s milk.

I just realized that sfinci is actually the same as what my mother and my grandmothers used to cook as breakfast when I was little, I mean i am not even Italian (actually tunisian) and it blows my mind how similar the recipes are, i mean it even has a similar name ( isfanj which is arabic for sponge), i am bamboozled 😅

Ive eaten Sfingi in Sicily with I THINK a "ricotta based sauce" with pistachios in Sicily - they were coated They were absolutely wonderful. I was over my life all over italy and the world but sicily imho has the best food in the world im sorry :D Thank you so much for your parmigana recipie on your website 🙏as also your olive oil recommendations also to me personally was never able to cook that dish - last time (with your recipie) it turned out wonderful (i made Zucchini Parmigana not with eggplant - and tried to spare with watery ingredients) Can highly recommend to also the viewers to try (if they get it) Frantoia Olive Oil - i love it because even cooked it has no "bitterness" - an absolute wonderful product Also made with that oil the best Aglio e Olio ive ever did.

The melting cheese of the Arancini is perfect 👌 (less is more)! This is Vincenzo/Italian Style, not Amerikan Style, I love it. The proportions of the ingredients are absolutely perfect. PS: I saw this video last year I believe.

I just finished forming the balls attempting to duplicate portions as I saw in the video. Ended up with far too much meat. Vincenzo repeated "be generous " but it seems I made double what was needed. Maybe my rice pocket was too thick? First attempt, so much to learn.

Interesting to see the sfinci, as I am Dutch: these look a lot like Dutch Oliebollen. Non-sweet, but with raisins. Eaten mostly at New Years Eve.

I love fried food, but frying at home is complicated especially for single people like me (in general, I try to pre-fry many portions, then freeze and finish the single portion in the oven, but it doesn't work for all recipes especially for sweets(it works great for breaded meat and it works good for french fries), which in fact I rarely do at home). It's not worth using so much oil (even if you reuse it) for a single portion of sweets that must be eaten immediately or as soon as possible so I only do it if many people of my family come over to my house and actually want to eat fried food (my father does not like fried food a lot)... Sometimes I make arancini and other similar dishes right in the oven, but of course it's not the same thing. Obviously they come a little dry. On the contrary, the fried food remains very soft. Sooner or later I will find a way to do all fried foods comfortably I just need to experiment a lot. I'm half Sicilian and I love Sicilian food. Arancini (but I'm doing them without peas... I only like peas fresh just picked, small, sweet that I remove from the pod myself... so they will not go in my arancini), bread and panelle, sfingi, cannoli, granita siciliana (the real one, soft like ice cream without chunks of ice) with brioche... I love Sicilian food. In particular I love the food of Agrigento.

I feel like making Aranchini after watching this. In restaurants where I come from the dish has misconception- Here in Israel every claim to be Aranchini I have seen has barely any Rice/no Rice at all, full of Cheese, no Meat or Sofrito or Peas, just fried Cheese balls in Bread Crumbs.

The cheese you put in the pasta did not melt and become creamy. This type of cheese does not do that.

Imagine properly rehydrated the raisins before burning the entire fritter. Some people just shouldn't be allowed to cook publicly. All I can see is a burnt mess that stinks. The fritters are terrible. The dried fruits are now carbon. The batter, not dough, is the deepest brown. The oil temp was too high. Respond with discussion not emojis.
