Gujarat me khaman and dhokla hota sab shop pe.. to wo log khaman and dhokla steam kar rakh lete hai.. aur rai means mustard ko hot oil me tadka lete hai.. phir oil ko strain kar lete hai siever me.. aur tadki hui rai ko container me store kar lete hai.. isko wo log tali ( fried) rai bolte hai and can store 20,30 days.. jab customer aata hai to dhokla liya bowl me us par oil pour kiya.. phir ye rai sprinkle ki..and coriander leaves and pack karke de diya.. this is the procedure in every dhokla khaman shop in india.. so now ladies here follow same concept and they store fried rai in kitchen.. when in hurry add 1 tsp. In dal or vegetable..no need to wait for heat oil and then rai tadkao.. its quik n easy.😊
