Moroccan Lentil Curry
Ingredients
• Black lentil 1.5 cups
• Onion 1, chopped
• Olive oil 2 tbsp
• Cumin powder 1.5 tsp
• Coriander powder 1.5 tsp
• Turmeric powder 1.5 tsp
• Cinnamon powder 3/4 tsp
• Black pepper powder 1/2 tsp or more to taste
• Carrots 2, chopped
• Water 5 cups + Chicken cubes 3 (or you can use chicken broth)
• Salt if needed
• Tomato 1 chopped
• Lemon juice 3-4 tbsp
• Fresh coriander leaves, chopped
Preparation
1. Heat oil in a pot and saute chopped onions until soft.
2. Add powdered spices (cumin, coriander, turmeric, cinnamon, black pepper) and carrots and saute for 1 minute.
3. Next add water and chicken cubes and tomatoes.
4. Cover and cook on low for 30-40 minutes until lentil is cooked.
5. Turn the flame off. Wait for 2 minutes and add lemon juice.
6. Top with fresh coriander and serve immediately with rice.
7. Enjoy!
Layered Eggplant Raita
Ingredients
• Eggplant 1 big, sliced into 1/2 cm thickness
• Oil 1 tbsp
• Yogurt 2 cups
• Salt to taste
• Chaat masala to taste
• Onion 1, chopped
• Tomato 1, chopped
• Cucumber 1, chopped
• Fresh Mint chopped
• Fresh Green chilies chopped
• Fresh Coriander chopped
Preparation
1. Apply on a skillet and arrange eggplant slices. Heat on both sides on low flame until cooked through.
2. Take out in a bowl and keep aside.
3. In another bowl, mix yogurt with salt and chaat masala.
4. In a serving bowl, layer half of the yogurt and arrange eggplant slices. Top with onion, tomato, cucumber, mint, coriander, and green chilies.
5. Add remaining yogurt and repeat the layering process.
6. Serve with some rice, Enjoy!
