I had so much corn that I needed to freeze and I wanted to have them OFF the cob so I started looking at ways to do it and found this quick and easy way to do it. I froze 16 bags of sweet corn. So easy!!

Hint: have your hubby drive a nail thru a small piece of plywood so it pokes out an inch or so. . .jam the cob down on it when u cut the kernels off. Makes it a bunch easier to control the cob.

Drive 2 small nails through the plywood and the cob can’t rotate. It can turn on one nail.

The whole idea is only one, it can spin. You don't wanna spin the plywood/board. 1 nail.

I use an angel food cake pan to hold the corn cob and an electric knife to cut the corn off the cob.

Makes me miss preserving sweet corn with my Grandma. She did it just like this except for the brine. I’m going to do it this way though, I don’t want to blanch nothin! Thank you Debbie!

Good way of doing it Debbie, Thanks. We have 40 acres of sweet corn that's grown for seed next door and they only pick 80% so. . .we'll be freezing corn till we are sick of it. Your way will save a bunch of time.

I've always cooked it first....this looks much quicker and efficient...I'm going to try it this way....and you could use the food saver when freezing this corn...just do as you said in the statement about freezing it on a cookie sheet to keep the brine in (I'm assuming)...just do that in a food saver bag, and when the brine is frozen, run the bag thru the vacumn and seal cycle of the food save....saves space and No freezer burn at all. I also do something similar when I make a large batch of chili or soup....I pour what I would use for an average meal into a tupperwear container, set it in the freezer and freeze it...immediately take it out of the tupperwear as a sold shape and put it into a food saver freezer bag, then run it thru the vacumn and seal cycle....the thing I reallly like about this is you save so much room in the freezer, no freezer burn and you can drop the bag in a pot of boiling water to cook it and then open the bag and pour into a serving bowl. I love, love, love that food saver! and I love your videos!

We just did this for the second time because we loved it so much the first time! Thank you! I am wondering if I put these in quart jars with a cup of the brine and canned it if it would work. I’m running out of freezer space.

I've had a "Food Saver" vacumn sealer food storage system for almost 20 yrs and it's still going strong and is one of the best things I've ever bought to use in the kitchen. Food stays fresher so much longer, including frozen things...NO freezer burn and it saves room....you can use it so many ways....I highly recommend it for anyone who stores food, likes to put up food during produce season and SAVE MONEY. I'm not paid by anyone, but it is such a no brainer...the advantages of using it are to much to list here....

Yes, I have one too but since this corn requires liquid, I wasn't sure I could use it. It would suck the liquid out. So I just laid the corn flat on a sheet pan, froze it on the pan and then put the bags on top of each other. Have a wonderful day!!

Ok, I get what you weren't understanding and I didn't explain correctly. I put 4 cups of corn in each freezer bag. Then laid each one flat on the cookie sheet and put it in the freezer like that. That way each bag froze flat and was easy to store in my freezer. Sorry for being so evasive in the post. Hope you understand now.

FYI- I freeze my corn in Rubbermaid containers. It’s just my wife and myself, so I freeze two cups per container. When it is frozen I use my food saver ( 15 years we have had it) to vacuum seal it. We generally do 12 dozen ears of corn. Last use all year. Happy cooking and GOD BLESS all there.

@@DebbieFoodPrepping my sealer has a "dry or moist" option. However you can't put liquids in like you did. That would be too much for the system.

The best way to cook the corn is cut ends off like you did. Then put in sealed bag or wrap in plastic and heat in microwave with silk and husks attached. The silk slides off.

Hi Debbie, I wanted to thank you for the tips on freezing fresh corn. How do I cook the corn afterwards? Do I use boiling water and just place the pouch in warm water or do I remove corn and put into a pot and cook that way? Any tips on cooking would be great. We have a load of fresh sweet corn I am looking forward to freezing this summer. Ty for the video and I gave you a thumbs up and sharing on FB too.

this is so interesting to me. I have never seen corn done this way. I have always cut it off the cobb, put just enough water in the corn that I could see it coming up through the corn, salt brought it to a rolling boil. cooled and bagged. This looks way faster. Quick question, how long do you half to cook it stovetop when you defrost it? I know this video is almost 4 yrs old. I hope you are well and have remained safe through covid. Thank you.

So you don't cook the corn before you remove it from the cobb, I've never heard of doing it quite that way...I've heard of freezing it on the cobb, sometimes with the husk still on. Why did you freeze the corn in the pan? Doesn't the pan waste freezer storage space? At the end of the video, you said you would bring us back but didn't...was there another step? Thanks for all the info...love watching your videos!

I laid the bags of corn flat on a sheet pan until they were frozen then took them off the sheet pan and laid them on top of each other since they were now flat. As for this way if doing them...I found the recipe online and she had been doing her corn like this for a long time and figured I'd give it a try. It's way easier than blanching it, shocking it, etc. And it looks amazing.

Anyone tried this method? This is my first year trying to preserve a lot of sweet corn, and there are SO many methods. I just want to get it right the first time. The blanche or don't blanche dilemma is confusing. I want it to taste like it was just picked as much as possible, without the soggy watery texture. Kind of like the canned corn from the grocery store.....if that's possible to do from home at all. Thanks to anyone who is willing to share their experience with this brine non blanching method.

Sorry. The best way is to GRILL the sweet corn naked, get some grill marks, cool, then cut off the ear. Brings out much more flavor, it actually dries it out a bit more and makes it more crisp. Put in freezer ziplock and try not to eat it all in the first month. :) In the middle of winter cook up some chili and put the grilled sweet corn in it on a cold snowy day and it will take you back to the last day you ate it straight off the cob.
