👍 glad y'all liked the Magamaid suggestion and sorry for any hair brained bad mead concoctions I've suggested to make in the past. Thankfully I got my job back after being out of work for almost a year and applying for other jobs. At least both of my parents needed my help with various projects to keep me busy for at least three months.

Oh wow! I’m definitely going to have to seriously consider getting my hands on maple syrup. Despite the cost of the stuff where I live this is just too tempting. I howled with laughter at Derica giving what in my family is called “the look”. All women in my family have perfected it to a fine art. When “the look” comes into play pets tend to magically retreat to a place they just know is safe and put on their most innocent and cute faces. Humans (if they know what’s good for them) tend to either shut up or immediately comply with whatever needs complying with. It’s amazing. 🤣

I pulled my one year and WOW! Also really glad i aged a 2L/.5 gal bottle, I had a swing top handle bottle from ABC store, i couldn't decide what to do with because it was so big and here Acerglyn which had potential but on bottling day I knew already had to age.

There's only one who would dare give me the raspberry! Lone Star! Great video. I'm in the middle of a slooooow moving cider with d47. I let it sit for 3 weeks, it was at 1.020, let it sit another week, its at 1.010. Back on the shelf for a another week. Sometimes the yeast just takes its time. I mean, its not like they can read? 😂

I bottled mead one time and forgot to degas. I ended up using one of those vacuum wine stoppers to degas and it worked out perfectly.

I added under a cup of canadian syrup into a cyser must, and loved the maple wood notes afterwards. was surprisingly prevalent in the brew despite the quantity used, maybe the bread yeast I used really enjoyed its time with it lol

My favorite batch had about 1 pound maple syrup and honey to 1.112, so about 2.5ish lb. Mine went all the way down to 0.994 and that was just too dry for me. I backsweetened with 9 oz of maple syrup and it turned out fantastic. In my second favorite batch I let it stay a bit dry, but added a vanilla bean for a couple weeks. That one tasted way sweeter then I expected and is pretty much a completely different world of flavor then my favorite batch

So im looking at making a cyser acerglyn mix. I'm new to brewing and have made a few recipes from City Steading. Have you had any experience with this? Any input would be fantastic! Thanks ahead!

@@1993Lakaiordie Hmm, that is an interesting flavor combination. You could do some google searching for anyone else that has tried it or do a little experiment. Start with some apple juice and add some maple syrup a little at a time to get a flavor that tastes good to you. Use that to estimate your proportions. It will probably get really sweet, but look for the point the flavors come together. If you need to you can water it down a bit, but keep in mind that will make the tasting a bit thinner then what your result would normally be. Giving a quick estimate, I'd guess you will end up with something like 8 oz maple, 1.5 lb honey, and apple juice to a gallon (or a gallon of apple juice if you have a big enough fermenter). OG target is going to be around 1.100-1.120 area. You can add honey or maple syrup if you are a bit low, but try to stay under 1.130 at max. I'm a big fan of 71b as well and it will chew through that like it was nothing, so you may need some back sweetening. Keep some of the maple syrup around in case it needs the back sweetening. That way you will have options between the maple and honey as needed.

@@CitySteadingBrews In case I worded it poorly, the water was just for the initial taste testing not for the actual brew. For the brew, yes definitely use apple juice only! And I meant to include using City Steading's super simple cyser as a base would be a great idea. Sorry somehow I didn't get that typed it, but its very true! The main reason I suggest the test test first is just in case the flavors don't mix in a way you like. That way you wouldn't have a gallon of something you might not enjoy :) suppose it could always turn into a give away brew :P

I did a batch of 2lb Honey, and 1.3lb Maple Syrup and the peel of a lemon. I just bottled it, and it came out great! Mine also came out dry 1.006 final SG.

I just started one of these earlier today, used 2 pounds honey and 1 pound maple syrup. Different yeast too, I figure I can backsweeten if I need.

I think certain Honey makes allot of difference in flavor, I wonder if certain amazing maple syrups would make a significant difference as well. I conditioned one for 3 weeks with french Oak and am dying to condition one for 6 to 7 weeks. we love the Acerglyn so its going to be hard to age a bottle for over a year. their is a maple syrup that comes in a can from Canada and it taste like no Maple Syrup I have ever had. a toasted rich candy flavor. looking forward to your tasting Video guys. thanks for all the wonderful videos.

I have bought commercial wine that was fairly pétillant. I was using it to test adjuncts (get 2 bottles add additions to one and not the other and compare) and in adding (i think cinnamon) it cause a little bit on a nucleation and a little bit of a foam over.

I think that the change in your diet has slightly augmented your taste buds. More appreciation for the lower gravities. I've noticed that in some of my brews since i had cut down my sugar consumption about a year ago, and a few of my one years are a bit too sweet now. I was just about to ask about sediment in bottles with skipping conditioning, but you already covered that. LoL

I had a brew awhile ago that tried to ferment while bottled. I kept loosening the cap and swirling to degas every other day for a week or so then once a week. So, swirling and loosening the cap regularly can help to keep away bottle bombs.

I'm jealous. My acerglyn seems to have stalled out and has been sitting for at least 2 months and it's still at about 1.040 which is WAY too sweet. ABV is at about 11%. I'm tempted now to just cut it with spring water and then carbonate it to make it an acerglyn wine cooler.

Nice. I was thinking these days, which would be the best way to name the age of the mead. I use to mark the end of fermentation, but I think the beginning, like you do, it's better. (or, could be the day of the bottlening...?)

Try not using over ripe bananas in your banana wine. I do however like to cook plantains with a drizzle of honey for 1 1/4 hrs at 325° and add that to the mix. I boil and strain two to three times and use the liquid as a must.

I really think you need to have some fermentation going on to blow up a bottle. When I make your grape juice table wine(71B version) it comes out fizzy like grape soda. I had 3 one gallon carboys vibrating around in my RV on a 750 mile trip to visit family, nothing blew up and it was still grape soda with alcohol when we got there.

It is a more safe than sorry situation. If there was any defect in the construction of a vessel not rated for carbonation, then it could blow. It could lead to a potentially dangerous mess. But I'm sure it is a rather rare occurrence.

@@CitySteadingBrews I agree with the better safe than sorry. I kept these in a storage area that had a drain and was all rotomolded plastic. I would think carbonation that occurs at atmospheric pressure(airlock vs flip top) would not be able to pressurize a vessel much more than atmosphere, but I may learn that lesson the hard way someday. I guess the airlock would cause it to be a bit more that atmospheric pressure inside the fermenter.

I love the new name to Megamaid! I have a brewing question. I started this recipe 4 weeks ago and my first reading was 1.060, today my reading was 1.010 and added yeast hulls. Can I back sweeten (after the next gravity reading) and wait to see if it will ferment again to boost my ABV from 6.75 to something closer to 71Bs tolerance? It would be like step feeding right?

It's best before bottling so you don't get sediment in the bottles. Cold crashing can sometimes clear a brew.

Working on a recipe for a 2-3 week fast mead gallon test batches basically what yeast would you recommend for low abv I'm looking for an 5-6abv easy drinker but fast to bottle.

Any yeast can do that low but you may need to pasteurize or use less fermentables.

Hi I have a question. I'm a beginner and I made a simple mead, it turned out nice, but dry. When I back sweeten it, can I add a bit of tea for the tannin or is it too late (I forgot to add it to my must)

You can yes. Just remember you may restart fermentation if you backsweeten.

2 questions ive come up with is this. Honey is 0.035 points of gravity in 1 gal/lb, does that double if you use 1/2 a gallon?? so 0.070 in 1/2 a gal or what would the change be? (might be a dumb question but incase others had it too) 2nd question revolves around carbonation. With Lalvin 71-B the tolerance is 14% but you guys have a 12% brew, do you need to pasteurize (if done with the correct amount of sugar to naturally carbonate) after a week or so to ensure no bottle bombs OR is it not a worry since it cant/shouldnt ferment after all the sugars have been used up?? (im sure youve talked about this before somewhere and I probably missed it)

If the ratio is kept the same, then it doesn't change, but if you simply put the same amount of honey in half the sized container, then yes it would double as the honey is less diluted by 1/2. For your second question, if the fermentation fermented out all the fermentable sugars and you have not reached the yeast's tolerance, you can add the specific amount of sugar required for carbonation and not worry about it fermenting beyond that as there will be no more sugar left to ferment.

@@CitySteadingBrews 1st question thats what I was thinking but better safe to ask someone whose been doing it for years rather than completely mess up a brew or 2. So if I had a 10% brew and i added 1 tsp (example, probably not correct but assuming it is) Ill have a nice 10.4% without any issues (.4% for carbonation and no issues if done correctly and safely)
