Ingredients quantity
Okra 500 gm
Mustard oil 3 tbsp
Dry red chilli 6 no
Mustard seeds 1 tsp
Cumin seeds ½ tsp
Fennel seeds ¼ tsp
Onion seeds ¼ tsp
Fenugreek seeds ¼ tsp
Asafodita 1 tsp
Onion chopped 1 no
Tomato chopped 2 no
Salt to taste
Ginger garlic paste 1½ tbsp
Red chilli powder 1 tsp
Coriander powder 1 tbsp
Turmeric powder ½ tsp
Garam masala 1 tsp
Dry mango powder 1 tsp
Ginger juliennes 1 inch
Green chilli slit 3 no
Fresh coriander chopped 1 tbsp
Coriander chopped for garnish
Method :-
1. Take an okra wash thoroughly and trim the ends and cut them into 1-inch pieces.
2. Place a kadai on medium flame and heat mustard oil.
3. Add dry red chilli, mustard seeds, cumin seeds, fennel seeds, onion seeds and fenugreek seeds let them splutter.
4. Now add asafodita sauté for a few seconds until they release their aroma.
5. Add the chopped onion and sauté until it turns golden brown.
6. Add the chopped tomatoes and salt cook until they turn soft.
7. Add ginger-garlic paste sauté for another 4-5 minutes.
8. Add red chilli powder, coriander powder, turmeric powder, garam masala and dry mango powder mix and sauté well.
9. Add the cut okra to the kadai and mix well to coat them with the spice mixture.
10. Now place the lid and cook on low to medium heat, stirring occasionally, until the okra is cooked through and tender. This should take about 10-15 minutes.
11. Now add ginger juliennes green chilli slit and chopped coriander mix well.
12. Now side out in serving bowl and garnish with chopped coriander.
