Yes Pressa I'm originally from St Mary but I have lived in America since 1969 and I remember my Grandma had an outside kitchen in the country and she had a Kreng Kreng over the fireside where she use to smoke the meat to help preserve it. I was young but I remember.

I love how this team work together to complete this project why it’s taking that long to complete lack of trade work men after that man in the house pass there’re going to be shortage of workmanship because these generations are lacking of motivation to get a trade because these gen only want soft skill that mean their hands and cloth dirty However I love how have these young people under his wings and giving them life skills he is a blessing he should start a big brother group and take some of these young people off the street God bless you Mr. Smith’s for taking the time away from your family to be with these young people Hang it out to Dry Find a cool environment to hang your salt-coated meat in. It should be someplace with a temperature under 50⁰F but above freezing. Allow the meat to hang in this cool area for up to a month or longer. Some information I read said you could store it up to a year, but I’m not positive about that length of time. If you have issues with flies, you can also wrap the salted meat in a coating of cheesecloth. It will keep the flies off of it, but still allow it to dry thoroughly. Check on the meat every few days, just to make sure it is actually curing and not rotting where it hangs. If it starts to smell funky, toss it out and try again. When it comes time to eat the salted meat, be sure to wash off as much of the salt as possible. You’ll then be able to cook it up and eat it in the recipe of your choice.

After put in my oil I would fry the pork skin take them out cook up my seasoning then put the Acker & pork skin for atleast 7 mins. Slightly stur everything. No mash up Acker. Love the look like ALWAYS 👍 👌 🙏🏽
