HOW TO MAKE SIMPOL ADOBONG PUTI

Who doesn’t love adobo? Every Filipino grew up enjoying their own household’s version of adobo, while foreigners usually start with adobo as an introduction to Philippine cuisine. Here, try a version that skips the soy sauce but ends up just as (or even more) delicious than the classic. Don’t forget about the dipping sauce AND the extra, extra cups of steamed white rice. Winner! Let’s start cooking #SimpolAdobongPuti!
INGREDIENTS
1 kilo pork belly
1 teaspoon rock salt
1 head garlic, crushed
1 tablespoon crushed peppercorns
3 to 4 laurel leaves
3/4 cup Datu Puti Vinegar
1/4 cup Datu Puti Patis
1/4 cup oil
For the dipping sauce:
Datu Puti Vinegar
garlic
red chili

This adobo was the recipe that my Lolo used to prepare especially when he travels from our province in Cagayan Valley to Manila and offered it as pasalubong to us in a "garapon". This adobo is i think similar from my Lolo's adobo, but this would be more delicious if cooked on firewood and a blend taste of smoke.. yummy..

Sa Bicol simple na simple, baboy, asin, suka, bawang at laurel kung meron, pakukuluan sya ng may takip hanggang mawalan ng sabaw at deretso na iprito gamit ang mismong oil ng adobo.

Matagal tagal na din ako dito sa "Middle Earth", Hehehe, kalokohang tawag namin dito sa sa middle east. Matagal na din akong hindi kumakain ng baboy. thank you so much for this recipee which reminded me of my lolas adobo but she just called it adobo and not adobong puti which i love so much,back then she would cook a big batch of this adobo and will store it in a container and pack the adobo into the same oil which will turn to lard when it cooled and thus preserving it.when its time to eat (usually breakfast) she would just scoop it into a hot kawali with lard and all to heat it up and even add more garlic and make the fried rice on the same kawali.

i remember my late father noong bata pa kami.mga late 70s.nag jatay sya ng alagang baboy namin kase waka kaming ulam.malayo kase kami sa market.aadubuhin halis lahat ni papa ang kinatay na baboy except sa ulo at paa.we make a poek soup out sa paa.ang ulo binibigay sa kapitbahay.gano mag adibo papa ko.suka na pure galing talaga sa sanggutan.then asin at maraming garluc.wakang patis.puting puri ang resulta at ang tagal maubos.we will just reheat the big earthen pot(kolon)pag matolog ang mantika.i miss my father cooking.he cook better than my mother

Adobong ilokano, adobo sa suka, asin ,bawang, paminta, laurel at vetsin. Super sarap! Patutuyuin pra lumambot Ang karne tapos igisa sa sariling mantika. Sarap!

Ito yung adobo na kinalakihan ko sa Cebu lalo na sa probinsya. pero instead of fish sauce we are just simply using ordinary salt kasi nga nung kabataan ko hindi ko talaga alam yang fish sauce cguro dahil hindi siya yung tipong ginagamit sa mga luto sa amin and hindi mo siya usually makikita sa sarisari store sa lugar namin sa probinsya instead SOY SAUCE ang meron at yun ang tinatawag naming PATIS. Pag sinabi ng lola ko bumili ka ng PATIS ang ibibigay ng tindera ay yung Soy Sauce. Nalaman ko nalang ang word na PATIS ay Fish Sauce pala sa tagalog nung nag abroad na ako. Also, during fiesta or pag may big celebration hindi talaga mawawala ang HUMBA na dish. Pag merong HUMBA merong ADOBO(cebuano style) kasi bago ka magluto ng Humba e adobo mo muna ang baboy meaning lagyan mo ng asin at garlic then cook it sa Kawali hanggang mawala yung tubig at lalabas na ang sarili nyang mantika then fry it till mag brown siya then yun na! ang Adobo na kinalakihan ko then pwd mo na gamitin para makapag luto ka ng Humba at yung mantika ng baboy isasahog namin sa kanin para gawing ulam. We always do this process kasi nga wala kaming Fridge so e Adobo muna namin para ma prolong yung shelf life nya. Nung nag abroad na ako dun ku lang nalaman na ang ADOBO na kinalakihan ko sa Cebu which is dry Adobo ay iba pala sa mga Tagalog or sa Adobo na usually nakikita natin lagi sa mga restaurant, TV or sa social media nowadays.

I believe adobo puti originated from Pampanga. I remember my grandma and mom made it that way.

eto yung pinaka favorite na ulam ng family namin... pinakagusto ko dito kapag may bahaw(kaning lamig). tapos alisin mo yung mantika sa pinaglutuan at dun mo ilagay ang bahaw (yun na mismo gawin mong plato hahaha)...super sarap nung mga naiwang tutong na adobo at bawang....

Adobong puti ng lola ko walang patis.. Suka, garlic, bay leaves, pepper corn, salt lng tpos gamit nya either pork or chicken na naka cube ng maliliit pgka cut. Medyo may sabaw. Sobrang sarap. 😁

Galing mo chef tatung sarap niyan.subukan k yan.pagkaiba ksi sa cebu at dito s ilokos asin gamit nmin.at ung mantika tama tinatago nmin pra pag walang ulam un lng ibahog nmin s mainit n kanin tapos kunting asin.solve na para kna rin nag ulam ng adobo.💯👍love ur vids &recipes❤

Ilocos adobo is also without soy sauce. Rock salt is used.
