I created the "Fog Burner" cocktail as an homage to San Francisco, where on most days the morning fog is burned away by the afternoon sun. A mezcal negroni is served inside a hollow ice ball and presented under a smoke-filled glass.

After 2 months of breaking shells, cocktails leaking out of imperfections in the shells, I can finally produce this cocktail for groups. Thanks for the demo.

i have tried to make the ice ball shell as well, and i am in the same trouble like you do. how did u solve the leaking problem, every time i injects drinks inside the shell, it starts to melt and leak immediately.

chen andrew When you put it in the freezer about half way through flip it upside down for an even coat. That fixed my problems.

I Flip the mold a few times during the freeze process, then puncture the ball in the top (while still in the mold), empty out the water, add a little fresh water back and slush it around to remove any ice crystals inside the ball, then freeze again. Every time you do this, a little more water is added to the side walls of the ball sealing it and making it stronger in the process...

I've always hated alcohol mostly because of how I've seen my dad treat it and what it's done to him. I made a promise to myself very young I would never touch it and drink it, don't get me wrong I still won't drink it but I've been watching and seeing the art of how you can really make alcohol more than what it seems. Your videos just pushed me over the edge, I just want to create all sorts of fun experiments and artistic drink combinations with variations in presentation. you really changed my perspective on how alcohol doesn't always have to be a trashy addiction or just for the kids my age to act like they're adults or 21 cause we are 18. Thank you 😊 it's really cool what you do.

Drink with moderation and don't ever over-do it. In small amounts it makes you feel nice and happy because it makes the dopamine in your brain move around and, unlike drugs, it doesn't permanently block off your dopamine receptors so you will still feel happy when drinking it.Being buzzed/tipsy is fun, but being drunk, it's a mess, it is not fun and you feel sick, you wake up feeling a huge amount of head pain and it feels like you are going to vomit. Drinking can be fun, but only do it at a moderate amount. NEVER DRINK AND DRIVE EITHER, even a small amount of liquor in your bloodstream can lower awareness on the road.

I really enjoyed the new presentation style and bump in quality you debuted in this video. You really seem like you're starting to really fall into your element. One piece of input I might add is that I really enjoy these highly advanced videos even though I will most likely never make the drinks. I personally enjoy just watching the craftsmanship and presentation of these films. I would love to see more of these videos in the future.

What a beautiful, magical cocktail! What really sells it for me is the vacuum effect as you lift the glass. I like to use a portable vaporizer for my 'smoke'. The vapour does not last as long as wood smoke, but still more than long enough to create the cocktail and present it. It also doesn't stink up the room you prepare it in. One issue is that you need a pump to pull the vapour from the vaporizer, since your lungs usually perform that task. I just removed the filter from an old aquarium pump and it worked perfectly! There are hundreds of nicotine-free e-juice flavours to choose from, and hundreds more food grade aromas to easily mix your own with. Black currant, apple cider or passion fruit? Sure thing! Apple pie, chocolate chip cookie or vanilla custard? No problem. Walnut, espresso or Cuban cigar? You can have it all! There are even companies and home brewers creating aromas such as pizza, freshly mown lawn and leather.

I really like that you use the ice ball shell! Any ideas on how to possibly add a cap to the shell after the spirits are added, such as to create a flavor bomb that, once melted, will completely change the drink?

i have an idea for a similar cocktail: do you know the experiment where you put a candle under a glass with water surrounding the glass? the water gets sucked in once the oxygen is gone. maybe do that but instead of the candle use some wood chip and, pour the cocktail outside. you get some smoke + the cool effect of the cocktail getting sucked in.

The ice ball can last longer once the cocktail is served if you have cooled all the liquid below 0°C before filling it. Since it's an alcoholic cocktail the freezing point will be much lower than ice temperature.

Would it unduly hamper the process of making this cocktail if one was to slightly dampen the opening of the jigger, and then after placing the iceball, freezing the 2 for a minute or so to make the iceball slightly more stable? I see myself getting to the penultimate step and then knocking the half-filled ball off xD

Ha, that's not a bad idea actually. You probably wouldn't even need to dampen the jigger since the contact with the ice ball will melt it a bit.

How do you get your smoking gun to produce such a full and steady stream of smoke? When I ignite my chips, there is an initial burst of dense smoke, which quickly peters out. Any tips? I'm having trouble filling my glass with that thick, dense smoke.

Nick Halim make sure the gun is running first prior to ignition, also be sure to distribute the chips evenly AND ignite them with the match slowly.

cool effect but I would recommend using more freezing cold surfaces. Cold air stays still and sinks downward, keeping the smoke with it. if the bowl were cold as well as the delivery container, it'd behave more like a fog, sticking low. also, using the same idea you can really have some fun with vapor. (yes, like ecig vapor but minus nicotine)

I love the Ice ball, as always, but is it really necessary in this case? Presentation is always a big deal, but the ball itself presents so many points of failure and then you are down one delicious drink. I would also suggest serving this drink hot; in fact, you can use this hot drink to create real fog if you freeze the wine glass, and do away with the smoke and fire hazard.

Correct me if I'm wrong but: would it be a huge deal if you were to jsut puncture the ball with something and then clear the water out by holding it upside down? The siringe seems like an unnecessary step here.

Square Kiwi its the same reason why coffee tumbler lids have two holes so you can drink from them, the vacuum would not allow you to pour the water out of just that one hole unless it was excessively large

Hey Nick, First, that framerate is the solution to all problems of the world. Second, I had an idea for you, could you do videos on different cocktails that are present all around the world? Zach Brown it's not that the temperature makes more smoke happen but if you can get the smoke and chill the temperature it would be easier to control and manipulate the smoke keeping you from losing as much smoke as possible.

Hey man, I've got a question for you if you don't mind. Recently a friend of mine gave me a nice bottle of scotch for my birthday because he knew I liked to drink scotch on the rocks. Only problem is, he didn't remember that I'm actually a bourbon guy lol. This scotch is incredibly smokey, and I can hardly stand to drink it on its own, but I don't want to waste it. Try a whiskey sour, the smokiness comes through but is not overpowering.

Cocktail Chemistry Will do. I wish I wasn't such a wimp when it comes to scotch, but I just don't enjoy anything incredibly smokey. I'm more of a buffalo trace/Jameson type of person.
