Afghan dishes are really well balanced between very spicy Indo-Pakistani and mild spicy Central Asian /Persian cuisine. No wonder it is the gateway to Indian subcontinent, Middle East and Central Asia!
Classic sauce for Mantu is the yellow split cheakpeas/lentils (whatever it is called in English, but in Dari it is called Daal-nakhod) with garlic yoghurt/chaka sauce, with optional tomato sauce. On the other hand, the classic sauce that goes with Ashak is kidney beans/lobiya sauce and garlic yoghurt/chaka sauce. You can't go wrong with these combinations.

Afghan food is more diverse than Iranian food. We have everything they have + way more food options. Dumplings (mantu) we have Oshack, which is a dumpling filled with chives and the meat sauce and yogurt would go on top with spices. We have many different rice dishes. We also have just about every Indian food dish, and one of my favorites you take on picnics, called Du-piaz-A. If you know you know 😂
No every family makes their own version, we put kofta pashan and lentil peas on it. Just because your mom makes with kidney beans that doesn’t mean it’s authentic
only criticism is that this youtber has the annoying habit of OVER using the word " Super " its pretty common with North amaricans , when you hear it for the 100 th time in a short video its TOO MUCH ... there are OTHER words ya know
