Afghani Malai Momos are a delightful fusion of Afghan and Nepali cuisines, combining the flavours of creamy malai (cream) with the beloved momos (dumplings). Here’s a simple recipe to make them:
Ingredients:
For the Dough:
1 cup all-purpose flour
Water, as needed
Salt, a pinch
For the Filling:
1 cup minced chicken or lamb (you can also use vegetables for a vegetarian version)
1 small onion, finely chopped
2-3 cloves garlic, minced
1-inch piece of ginger, grated
1 green chili, finely chopped (adjust to taste)
1/2 teaspoon cumin powder
Salt and pepper to taste
Fresh cilantro, chopped
For the Malai Sauce:
1 cup heavy cream
1/2 cup milk
1/4 cup yogurt
1 tablespoon ghee or butter
1 teaspoon garam masala
Salt to taste
Fresh cilantro, chopped
Instructions:
Prepare the Dough:
In a bowl, mix the all-purpose flour and a pinch of salt.
Gradually add water and knead until you have a smooth dough. Cover with a damp cloth and set aside while you prepare the filling.
Make the Filling:
Heat a little oil in a pan over medium heat. Add chopped onions and sauté until translucent.
Add minced garlic, grated ginger, and chopped green chili. Sauté for another minute until fragrant.
Add the minced chicken or lamb and cook until it’s no longer pink.
Season with cumin powder, salt, and pepper. Mix well.
Remove from heat and let the filling cool. Once cooled, mix in chopped fresh cilantro.
Shape the Momos:
Divide the dough into small balls and roll each ball into a thin, round disc (about 3-4 inches in diameter).
Place a spoonful of the filling in the center of each disc.
Fold the edges together to form pleats and pinch them to seal the momo. Repeat with the remaining dough and filling.
Steam the Momos:
Grease a steamer basket or a plate with oil to prevent sticking.
Arrange the momos in the steamer, leaving some space between each momo to prevent them from sticking together.
Steam for about 12-15 minutes until the momos are cooked through and the dough is translucent.
Prepare the Malai Sauce:
While the momos are steaming, prepare the malai sauce.
In a pan, heat ghee or butter over medium heat.
Add heavy cream and milk. Stir well and let it simmer for a few minutes.
Add yogurt, garam masala, and salt to taste. Mix until well combined and simmer for another 2-3 minutes.
Stir in chopped fresh cilantro and remove from heat.
Serve:
Arrange the steamed momos on a serving plate.
Pour the warm malai sauce over the momos just before serving.
Garnish with additional chopped cilantro if desired.
