Afuri - Origin of name
The name "AFURI" comes from Mt. Oyama (commonly known as Mt. Afuri) located at the eastern end of the Tanzawa Mountains in Kanagawa Prefecture. The soup is prepared with pure natural water that springs from the foot of Mt. Afuri, so we named it "AFURI".

As the father of Mt. Fuji, Mt. Afuri has been loved since ancient times. In the first place, it was also called "Amefuriyama" and was also a mountain of gods entrusted with wishes for a bountiful harvest by the people. In addition, its majestic and dignified appearance attracts people, and it is said that hundreds of thousands of worshippers visited annually during the Edo period. We at AFURI also want to be a presence that makes people happy in Tokyo, the city of modern Edo.
Commitment to Ramen
AFURI's ramen is prepared at the Central Kitchen in Nanasawa, Atsugi City, Kanagawa Prefecture, at the foot of Mt. Afuri. A soup made by luxuriously cooking domestic whole chicken, seafood, and flavored vegetables in natural water from Mt. Auriyama. The taste is so delicate that the taste and aroma can change just by boiling a little, and the climate, humidity, heat level, and time are all carefully calculated. The taste of ramen is controlled by the special salt sauce and soy sauce sauce. All the char siu is made in the central kitchen in pursuit of the best taste of the day. It is prepared every day at the foot of Mt. Afuri, carefully cooked at each store, and served to customers.

We’re named after a mountain-Mt. AFURI, on the east edge of the Tanzawa mountains in Kanagawa prefecture. Legend has it Afuri is the father of Mt. Fuji.
Afuri has long been known for its waters, and in days past, it was considered a sacred mountain of good harvest, and thousands would journey to Mt. Afuri every year in pilgrimage. We like to think we’re bringing sacred Mt. Afuri to the rest of the world. The mountain provides us with a kind of philosophy. It can be a little tricky to translate it literally from Japanese, but let’s just call it “Higher.” We push higher in everything we do-everything, from pickling to serving-and we intend to reach for excellence as long as we are AFURI. Mt. Afuri remains-straight, honest, steadfast, dependable. That’s our aim. One ramen. One staff. Always higher.
Our Ramen
AFURI ramen is different from ramen you’ve had elsewhere. It’s lighter, refreshing-even a little delicate. We’re particular about all our ingredients-but there’s one ingredient in particular that makes AFURI ramen special. We make our signature ramen with yuzu, a small yellow citrus fruit native to Asia. We splash it in our fresh chicken broth and we garnish it on top, too. It adds a touch of freshness to our ramen and pairs perfectly with our broth and charcoal-grilled pork. We think of it as a thoughtful, refreshing update on everything that makes ramen so great.
