Agave tequilana, commonly called blue agave is an agave plant that is an important economic product of Jalisco, Mexico, because of its role as the basic ingredient of tequila. This plant produces high amounts of sugar, mostly in the form of fructose and has properties suitable for making alcoholic beverages.
This plant grows in places that are more than 1,500 meters high and grows in loose and sandy soil. The blue agave plant grows into a large succulent plant, with fleshy, spiny leaves that can reach over 2 meters in height. The agave will grow into a tall stalk when it is about 5 years old and grow to a height of five meters with yellow flowers at the top. This stalk will be cut from the commercial plant so the plant will put more energy into its heart.
Tequila production
Tequila is produced by removing the heart (piña) of this plant in the 12th year. Piñas that are ready to harvest typically weigh between 36-91 kg (80-200 lb). The heart is hulled and heated to remove the sap, which is then fermented and distilled. Other drinks such as mezcal and pulque are also produced from blue agave and other agaves by different methods (though still using sap) and are considered more traditional.
