Recipe:
4 - 6 ears of shucked corn on the cob
1/3 cup of mayo
1/3 cup of sour cream
1/4 cup Cotija Cheese for sauce and about 1/4 cup of cheese to top corn
1/2 - 1 tsp Chili Powder (start with a 1/2 tsp after all mixed taste to see if the other 1/2 is needed)
1/2 tsp of Paprika
1/2 tsp of Black Pepper
1/4 tsp of Tajin seasoning
1 1/2 Tbsps. of Cilantro and a little extra to springle on the corn before serving.
Lime
Spray corn with a little olive oil and cook in the air fryer on 375 degrees for 7 minutes. Turn and rotate corn and cook for an additional 7 minutes. Remove corn and let it slightly cool. Mix all ingredients and brush on sauce, sprinkle with cheese and cilantro. Serve.
