AJVAR | Best Summer Dip With Grilled Red Pepper & Eggplant

We are making AJVAR, another delicious spread from two of the blessed summer veggies red peppers and eggplants! With grilling the veggies and bringing all the flavors together it is packed in flavor, surely a wonderful company as a dip or spread for breakfast.
Ingredients For Ajvar:
1 kg. eggplant
1 kg. capia red peppers
2 onion
3 cloves of garlic
about 5-6 tbsp olive oil
about 1-2 tbsp grape vinegar
hand blender or food processor to puree (If you don't have it, make sure to chop it finely after grilling and skinning)

How long do you cook it? I like ajvar a lot and want to cook it this way. In Kosova where I come from the ajvar is cooked for 6 to 7 hours. I think it loses all the vitamins . Thanks for the answer!

@@rabijezeneli8493 I asked my mother, and she also said I should cook it for hours. I did it like in this video and it turned out great without much cooking (I think it was 10 to 15 min). I didn't can it, I ate it during the week. Hope this helps!

Serbian (and Macedonian) version contains just peppers, maybe eggplant. And salt and lots of sunflower oil. But Macedonians make malidzano with green peppers, eggplant and mustard as well.

Omg eggplants and peppers my favorite veggies and combo too aysenur dear it's like you read my mind I'm Jewish with mostly ashkenazic eastern European background with a little hint of sephardic blood in me I love making anything with eggplant and peppers @ well @ other veggies lol eggplant was the first thing my mom fed to me when I was six months old and till this day I still love it I've bought ajvar from the Russian supermarket near me but I've never made it before but now seeing your recipe I definitely gotta try this looks so delish healthy colorful and mad easy peezy it would be so perfect for shabbat (the sabbath) and holidays or special occasions omg love it on bread or by itself thanx again dear cousin sister you have really been a major breath of fresh air throughout this worldwide pandemic please stay safe healthy hydrated and blessed peace

Is a traditional spread in Macedonia. We make it in large quantity; we don't use garlic, vinegar and onions, and we eat it with white cheese. Also we don't discard the liquid from the baked veggies. That makes the preparation a bit longer, but the taste later.... Very, very tasty.

It is a dish also widely used in România. Sometimes with more onions, sometimes with mushrooms as well, and even with white beans. However, I have one suggestion: drain the baked eggplants separate from the baked peppers. You want the juice from the peppers, but you don’t want the juice of the baked eggplants to go in the final product.

Thank you so much to share it... Its seasoning and looks was similar with "terong balado". But in indonesia, we're not wasting the skin of terong/eggplant. 😁😁 and we have many variant of chilli, with many different level of hots...

no where near the balkan region. but my turkish friend made me eat this in the morning once. i've been addicted since. i get ajvar like once in a while but ill eat a jar in a week. its so great in the morning on some toasted bread. same with also pekmez and tahin are great

Good job dear. Here in north of iran we have sth like this food with little difference. And it is very famous. We grill the eggplants and tomatos then we peel them and mix them in the food processor or by big knife. Then we chop some onion and garlic we fry them by adding spices then we add eggplant and tomato then we cook it for half an hour at the end we fry an egg and put that on top of the food

Salam from Malaysia. Here we call this as ‘sambal’ . We blend the red pepper together with onion and garlic first. And we use tamarrind juice instead of cider. We fried the brinjals and mix it after that. We eat it with rice.

I'm from Germany and love Ajvar - and Turkish food. Ajvar is great with cevapcici but I also Iike it with grilled cheese, as a filling for puff pastry rolls (mix with an egg and grated cheese, roll up, cut into slices and bake). I also like to add it to the potato filling for gözleme. I have never made it myself since you can buy it in every supermarket but when we next have a barbeque, I'll give it a try although I'd use less eggplant and more peppers than you did.

Greetings from Romania. The same recepie we have in Romania, but we don't put vinegar. Also, we have another variant of Ajvar where instead of aubergines we put forest mushrooms. A real delight.
