Recipe:
Begin by roasting on medium heat
1/4 cup pumpkin seeds
1/4 cup of sunflower seeds
1/4 chopped cranberries
1/4 chopped pecans
Optional: teaspoon vanilla extract, 1/4 cup of cacao nibs
Once all is roasted add: 2 1/2 cups popped amaranth
Stir a few seconds and turn off heat , then add 1/2 cup of agave syrup mix until all ingredients marry well
On a baking tray with parchment paper pour all ingredients mixed with agave, compact, and flatten out to the shape of the tray. Chill on counter. Before it hardens make sure to cut out the shape of the bars to your preference.

:Starts popping: ALEXA Add Amaranth to my shopping list. I think she's playing a song. Anyway, I had it on my list to grow this year and blanked. Better see if Fred Meyer still has them :) Can't wait.
