People with gluten allergy will have allergic reaction watching this video 😂 I love rice. I'm Indian and grew up eating rice everyday. In America I don't find some of the aromatic rices I was used to in India.

I never waste rice, if I have leftover, I heat it back up with lots of butter and eat every grain.

I once told a Thai friend that I like Indian style basmati rice, apparently he interpreted it like I just said "I hate Thailand" - and he refused to talk with me for almost a month.

Today I learned what Riceberry is. The Thai way of eating rice with a spoon and fork (Who knew!!!). Tips on how to keep rice from sticking to your serving spoon. And how important rice is in Thai culture. Mind blown, thank you both.

Regarding 21:20 , I tink that the one-kunckle rule is wiser than prescriptions like "a rice-to-water ratio of 1:1.25". Assuming a linear scale like this is a recipe for mushy rice, beucase the required amount of water should hardly be proportional to the rice amount, since the amount of evaporation for a given pot does not really depend on the rice amount; on the other hand, the knucle rule accounts for the same amount of evaporative water loss regardless of rice amount, and works reasonably well as long as the pot is neitther uncommonly wide nor narrow. Honestly in the southern US there's more corn than potatoes! Grits, hushpuppies, multiple kinds of cornbread. And depending what part of the south you're from there can actually be a surprising amount of rice, especially among certain populations descended from the enslaved.

Great episode, thanks. I cook my rinsed rice in a ceramic donabe. My cooking times are 13/3/11 on electric stove at 5.5. That is heat water -13 mins (steam coming out of lid hole), 3 mins after rice added and lids on - steam emitting from lid hole again, turn heat down low < 1.0 for 11 mins. Shut off fire, rest 10-15 mins. Works for Jasmine and basmati rice. For brown rice, more water, cooking time about 30 mins instead of 11 mins. I have rice cooker but prefer using a JP donabe - double lid pot. The above times are for 1 GO CUP of rice (180ml), good for 2-3 servings.
