All Boss Fights in Assassin's Creed 

AC1 might've been the best just because the game gave you the freedom to just instakill. Also, if you remained Incognito during the entire ending mission in AC2, you get _very cool_ techno final boss music when you fist fight the pope. Definitely reupload if you have the time/ease of editing

I was enjoying Syndicate, Starrick boss fight let me down so hard. I would've preferred he held on to the piece of Eden for a whole sequence cus I was really curious how the dude would be an even difficult challenge among the rest. I prefer Jack the Ripper where assassin's skills were necessary.

God the dialogue animations for odyssey and valhalla are atrocious. I genuinely have no idea what the developers are thinking. They move and sound like ps2 era characters. So much potential. What a waste.

I feel like most of the final bosses were pretty good and memorable.. but revolution may be most forgettable, unity felt way to cliche an ending with more forced attachments than real ones syndicate was wasn't very strong with characters, just mostly going down a list without care Odyssy I personally hate because I wanted the good ending but because of one F***N line from earlier I couldn't get it plus the "real" final boss after killing everyone else was so unsatisfying

i gave you some advice, when you said "all" you should include all Assassin's Creed title like Liberation, Chronicle, Bloodlines etc, or you just can put "all main title boss fight in asassin's creed"
