There is a lot of cooking-related content I like on YT, but this is one of the few shows that I really love. Apart from Kenji/Serious Eats and Good Eats, there is almost no touching upon the science in cooking, which is a shame. So this is really appreciated.

Botanically unrelated (sweet potatoes and potatoes are related; yams are not). Enslaved Africans noted that the New World sweet potato looked superficially like a yam so perhaps to keep their spirit in their homeland, they called the very different but equally versatile sweet potato yams. Southerners and Okies like my family continued to use the term "yams" and I believe you can still find canned "yams" in stores. I doubt many westerners have ever actually had a genuine yam. Dan's videos are pretty light in mood. I suspect he wanted to avoid the whole "enslaved people" topic.

I have another contender for best sweet potato dish: a sweet potato smoothie. Cook the potatoes (I use a Crock Pot with just a small amount of water), cut them up in cubes and freeze them in small portions. Put a portion in your blender/Nutrabullet/Ninja with two pitted dates, a generous amount of cinnamon and nutmeg, and milk or milk substitute. Tastes like liquid pumpkin pie 😋.

*sheesh* all these flirts for Dan...all I have is a science question: How far in advance can I par boil the sweet potatoes? I'd like to prep them, then add them to corn starch slurry LATER to fry for dinner? Thanks for your help....(Dan, my panther wants to know if your panther dates?)

I'll answer this. Once you parboil you will convert starch to sugar. But then toss in a fridge without the slurry. Heat the potatoes back up slightly to replicate the same heat as taking them out fresh after parboiling so they can create the cornstarch slurry. DO NOT slurry and store otherwise you create inedible sludge over time.

Found it: Note that this recipe calls for starting the potatoes in a cold oven. Choose potatoes that are as even in width as possible; trimming the small ends prevents them from burning. If you prefer not to peel the potatoes, just scrub them well before cutting. 1 INSTRUCTIONS Toss potatoes in large bowl with oil, salt, and pepper to taste until evenly coated. Line 18- by 13-inch heavy-duty rimmed baking sheet with aluminum foil and coat with nonstick cooking spray. Arrange potatoes in single layer on baking sheet and cover tightly with aluminum foil. Adjust oven rack to middle position and place potatoes in cold oven. Turn oven to 425 degrees and cook potatoes 30 minutes. 2 Remove baking sheet from oven and carefully remove top layer of foil. Return potatoes to oven and cook until bottom edges of potatoes are golden brown, 15 to 25 minutes. 3 Remove baking sheet from oven and, using thin metal spatula, flip slices over. Continue to roast until bottom edges of potatoes are golden brown, 18 to 22 minutes longer. Remove from oven; let potatoes cool 5 to 10 minutes; transfer to platter and serve.

My favorite and simplest receipt for sweet potatoes is to put them in whole on a baking sheet for an hour at 350. Then let them rest until the skin separates from the flesh. They are soft and juicy but will hold themselves together while falling apart with a fork.

I often make a sweet and salty nut butter sauce for roasted sweet potatoes. Any nut butter, sesame oil, a little salt and a generous amount of sugar :)

I don't deep fry my sweet potato chips. I place them on a baking tray, near the top of the oven, at about 200 C. Sprinkle with a little oil, and dried thyme. 20 minutes or so later, delicious chips. Surely, healthier than cooking in all that oil.

I don't know if I just buy out of season sweet potatoes(your typical red garnet)or old sweet potatoes, but they always come out mealy instead of sweet no matter what or how I cook them, from the grocet stores. I tried wrapping in foil and smoking them for an HR+ or baking them for an HR. They still come out mealy. It's carmalized but still mealy. I've grown my own and they taste different (sweet) from the store bought one.

Recipe is suddenly behind a paywall? What gives? I love Dan and his recipes, especially the sweet potato fries. I've been using the recipe since this video came out!! Now I suddenly can't access it. I understand you guys need to get paid for the content you produce, but bait and switching viewers by suddenly throwing recipes behind a paywall months later isn't the way to do it. Monetize your videos with ads, I'm fine with watching ads so you can get your coin, I revisit these videos over and over again, but the paywall thing really sucks. This doesn't motivate me to purchase a subscription to Cook's Illustrated, it motivates me to not use your recipes further so I don't become dependent on something that will suddenly become unavailable behind a paywall. Please reconsider your strategy. I know you probably will never see this, and if you do, you'll probably just say "lol just one person, who cares girl BYE" but MAN I was a really, really big fan. It's not about $1- it's about the principal of a really shitty bait and switch and you being intentionally vague about the recipe throughout this video to drive people to your website with a recipe from 2014 that you've had open that entire time that you were going to intentionally stick in a walled garden a few months after releasing this video. I feel stupid, I feel tricked by you! I recommended you and your recipes to so many people. I even included your material in a presentation I gave to a room full of Master Gardeners where I empathically recommended your content as a fantastic resource for upping your game as a home cook. I feel embarrassed thinking that a lot of those recipes I've passed on to my friends and folks I know they probably can't even use now. There is a GOOD REASON why other cooking publications like Serious Eats have not used this monetization strategy and I suggest you look into why. Dan, what you're doing really sucks. Please reconsider. I'd rather you monetize with ads than do this. It's disingenuous. Perhaps I'm really misunderstanding something here- I hope so. I only write this much because I enjoyed your content so much and genuinely hope for a better change in direction in the future from you guys. Until then, good bye.

I had some sweet potatoes that needed cooking before they hit the compost bin, I cut them in chunks coated in oil and salt and threw them in the air fryer yumm. Having said that I am going to try this as I love sweet potatoes 🍠

i've tried. it's hard to coat them in oil after coating them in the cornstarch mixture. It's not going to get crispy without the oil.

The problem with deep frying is the big waste of oil. Is there a safe way to store and reuse it, and for how long?

You can strain it and store it to re-use it several times. but you might not want to re-use oil that you've fried fish it unless, maybe, it's to fry more fish. You do want to look up how long you can store the used oil.

side tangent on the asian sweet potatoes - don't throw them out if they sprout! it's very hard to get them to grow actual sweet potatoes, but plant them and the stems of the upper plant can be eaten and are very tasty tossed in oil and garlic. :)

My favorite way to eat them is just baked like a potato then split open and butter on them. Delicious. But however you like them, don't add sugar! Candied sweet potatoes are terrible. Just have a lollipop if that's your thing.

Best snack in the world-from India.Oven roast whole sweet potatoes(about 40 minsbut a 6min prelim in microwave cuts down roasting time by 15 mins) till the juices are bubbling on surface.Cut in half lengthwise,sprinkle lightly with salt &freshly ground pepper &a generous squeeze of lemon juice Scoop out &eat with spoonThe crispy skins too are tasty.The flesh is a delish alternative to mashed spuds esp with roast pork

I'm glad you didn't prepare them douched in brown sugar and marshmallows. Desert should not be part of the main course. You seem to enjoy sweet potatoes without adding sweet all the extra junk. They are delicious in and of themselves; baked with just salt , pepper and butter or fried. Thanks.

I like to cut up sweet potatoes or yams and slowly simmer them in water, with a pinch of sea salt, about a table spoon of honey, a quarter teaspoon of both turmeric and curry powder. Let simmer for 20 minutes or so. Then either eat as they are or make a soup or a pie filling. Just something about the complex flavour profiles that develop with this combination. One could add some chopped dates, figs, currants or raisins to the cooking liquid instead of honey.

They do make a pretty plant..my.mom used to put them in a half filled water jar. Made a beautiful vine.. But yes I eat sweet potatoes .. So I'm going try some of these recipes. Thank you!!!

Since the outside is already so starchy with that sweet potato starch mixture, do yall think these would lend themselves to oven baked fries? Im thinking of how the British make their fries (boiled to expose starch on the surface and then baked to crisp up the starch) and it's making me wonder...

Just same as a baked potato. I put them in at like 375 and bake till a fork goes in easy, around an hour. They'll look wrinkled after they come out but are perfect.

It would make my year if Dan would make a video about turnips. My family were turnip farmers but all the turnip knowledge passed with the older generation before I had the chance to pick their brains.
