This candy bar took longer to make than expected. I had made Almond Joy Brownie Bites at Christmas a few years ago so I kind of had an idea of how this would go. This time the mixture seemed more wet so I had to adjust it to make it work. Everyone who tasted them said these tasted just like an Almond Joy. And the melting chocolate wafers didn't melt in your hands like the regular semi-sweet chocolate chips did. Plus, this chocolate wasn't as sweet and that made it taste better, too. Almond Joy Bites
Ingredients:
6 cups coconut flakes
1 can (14 ounces) Sweetened Condensed Milk
2 bags (10 ounces each) melting chocolate wafers (I used Ghiradelli Milk Chocolate Melting Wafers that I bought at Walmart)
2 tablespoons coconut oil, divided
Approximately 50 almonds, optional
Directions:
Cover a cookie sheet with wax paper.
Mix together coconut and sweetened condensed milk.
Form into balls or logs and place on cookie sheet.
Press an almond into the center, if desired.
Put in the freezer for about 4 hours.
Melt one bag of melting chips with 1 tablespoon coconut oil in microwave for 1 minute.
Let cool for a few minutes.
Take coconut logs out of freezer.
Dip in melted chocolate and place on another wax paper covered cookie sheet.
Place back in freezer for about 20 minutes to harden.
Store in an airtight container in the refrigerator.
Makes about 50 almond joy bites
