Ingredients:
2 tsp peanuts
2-3 tsp oil
1/4 tsp mustard seeds
1/4 tsp urad dal
1 dried red chili
8-10 curry leaves
A pinch of asafoetida (hing)
1 medium onion, chopped
1 medium tomato, chopped
2-3 green chilies, chopped
1 tsp salt
1/4 tsp turmeric powder
1/4 tsp ginger-garlic paste
2 medium potatoes, boiled and mashed

Instructions:
Start by dry roasting 2 tsp of peanuts in a pan until they turn golden brown. Once roasted, keep them aside.
Heat 2-3 tsp of oil in the same pan. Add 1/4 tsp of mustard seeds, 1/4 tsp of urad dal, 1 dried red chili, 8-10 curry leaves, and a pinch of asafoetida (hing). Fry until the mustard seeds start to splutter.
Add 1 medium chopped onion to the pan and fry until translucent.
Now, add 1 medium chopped tomato, 2-3 chopped green chilies, and 1 tsp of salt. Fry until the tomatoes are tender.
Once the tomatoes are cooked, add 1/4 tsp of turmeric powder and 1/4 tsp of ginger-garlic paste. Fry until the raw smell disappears.
Add 2 medium boiled and mashed potatoes to the pan. Fry on low flame, mixing well with the masala.
Finally, add the roasted peanuts and a handful of chopped coriander leaves. Mix everything well.
