Some farms don’t kill the sturgeon now as they take so much time and resources to mature. They squeeze the roe out with a special massage technique and it comes out of the sturgeon’s hoo ha, then she goes on to live her fishy little life until she has produced more eggs and the process is repeated 🖤

Currently, the biggest caviar producer is China by a huge margin. Next time, when you get your made in US/Canada/Italy caviar, it could just means they got import from China and the local company just AGED it and put in a tin.

Sturgeon fish is widely consumed. I highly doubt that they just waste the entire animal. Now not all countries are equal in conservation practices. Hence the beluga sturgeon becoming almost extinct. However, I believe that most companies now realize that without good conservation habits they will not have an industry left.

I wish they’d squeeze out the eggs and allow the female to lay eggs again. A little fewer eggs but the female lays again (I think they become mature around age 3?). I’d like to know if they also sell the killed sturgeon fish for consumption - it would be horrible for the fish to go to waste.

They kill them because the eggs are extracted from the ovaries of the fish. In order to get the quantity of eggs needed, that means opening up the fish and scooping them out. There's no way to massage them out and also get enough eggs for sale. Capitalism over welfare, as usual.

Hope they can use the gutted sturgeon for food of some sort. Seems like a waste to throw it away. I was very impressed by all the scientific equipment and biohazard suits! Never had caviar, but the thought of eating fish eggs grosses me out. Must be delicious though for the price.

The ridiculousness of using microscopes to examine each egg and make sure it's absolutely perfect is beyond comprehension. It's almost hilarious, how intricate the process is that they use to determine the quality of freaking fish eggs. I guess if I was dumb enough to spend $5,000 on eggs, I'd want every sphere to be perfectly round also 😂

No. The eggs are harvested from the ovaries and you can't get to the ovaries without opening up the fish.

Last time I had a jar black caviar was 1987. It had enough salt to last me for a lifetime. As a kid we had a couple jars of black caviar we got from the Deli. We only had it once. Way too salty for me.

Well, Caspian sea Beluga Sturgeons have almost been whipped out because of uncontroled over fishing. Iran and China caviar makes up for production. Several countrys are producing farm raisel Beluga Sturgeon Caviar. Florida USA Farm Beluga Caviar for $175 2Oz-50 Grms
