Please excuse my ignorance but as I am new to the channel and I like to bake but I will never be in the same league as you. Is the medium you are using butter cream or some thing else ?? I did a cake yesterday for the first time using Ermine Buttercream and it was glorious, never knew about it until I seen others on youtube use it. How are you able to colour it and last question the brushes you use are the specifically for booking ?? You are a maestro at this your art is on another level. I often went to cake international when it was in the UK and the cakes and cookies just blow me away.
