I guess each farm and country do it differently we grew ours on shelves and graded them constantly and sold with shell on, much cleaner uniform oysters, I used to love squeezing the little squirters

I was saddened they crushed the shells. Putting whole shells back in the water near the shore is actually good for wild oyster growth and water quality
