Always wanted to learn how to cut the flower patterns they look so elegant on the plate , oh and taste great to , they look dynamic when fried in tempura, it takes a lot of control with a cleaver to accomplish these patterns, I’ll be doing my best with a sashimi knife , thank you for posting this informative video 👍🏼

cleaver is a must i guess. i try using normal chef knife always end up too shallow or slicing it through

Can you batter and fry the already pouched squid or would you batter it raw and fry for let's say salt and pepper squid? 🙂 Beautiful technic by the way

add baking soda, then acid to the squid, (lemon or vinegar), you ll see it fizzle like a soda, the gas expand the flesh

We used to go to a Chinese restaurant where the squid looked like butterflies. Unfortunately the restaurant no longer exists. Had anybody an idea how that might be done?

It's not gimmicky. It was already explained in the video that it maximises surface area for sauce to stick and thereby increases flavour. As squid is easily overcooked, this also serves to make it more tender for dishes that require longer cooking.

I had Squid legs that looked like this today at a Thai restaurant. It was absolutely horrible - I assume they were prepackaged.

Squid is cheaper and tougher; calamari is more tender and expensive.

Not really. The smaller it is the more tender it is. Calamari is just the Italian name for it but I know this will start a war. But there really isn't a difference other than size as to which is more tender.

@@Coasterdude02149 What is the difference between squid and calamari? About $10 a kilo. Squid and calamari are two different beasts. Squid is cheaper and tougher; calamari is more tender and expensive. Squid is generally Nototodarus gouldi, also known as Gould's squid, but a species named Teuthoidea is also targeted. Calamari come from the genus Sepioteuthis. You can see the word "sepia" in the name, which refers to their ink. You can tell squid from calamari by the fins that form an arrow shape on the end of the squid's hood. The fins of calamari extend almost all the way down the hood.
