Farmers of Robusta your barrel fermentation method please add one step. Add magnesium hydroxide and water. Try firstly on a small scale to make sure it will work. This will neautralize the nearly 50% chlorogenic acid that makes all coffee whether robusta or arabica cause digestion issues. If you did this step, I'm hopefully it would no longer be necessary for me to add magnesium hydroxide into my brewed coffee grounds every time I have a cup. And the caffeine will remain in tact and the flavors. Please try. And serve to those that normally will not drink coffee because of digestion issues or stomach upset. And they should find they can then drink coffee and enjoy and enjoy its flavors. And the berries of the coffee with your method will still enhance the flavors. So it will need to be brined in the barrel instead of fermenting. But some fermentation may still occur I am not sure. If you do this, I think you will be the one to go with for coffee because robusta supposedly contains more caffeine than arabica reportedly twice as much so this is more appealing to me to go with robusta. I think a big shift then would occur and you'd be on to something big, something everyone would want and baristas will be serving here in USA. The coffee that wouldn't upset stomachs, still taste good, and have more caffeine than other coffees anyway!
