It's very tasty. However, it's notorious for its bones so very difficult to eat. But you can also buy a deboned one (not sure if you can find one in the wet market.) Btw, just want to share that the Philippines won another award - World's Best Country Tourism Destination in 2022 at the Uzakrota Global Travel Awards (Turkish travel organization). Also, Boracay is Condé Nast Readers Choice Best Island in Asia for 2022. (It was Siargao in 2021.) :)

you should try pusit(squid) kinilaw.. it is much sweeter than fish kinilaw.. but make sure its fresh, so its juicy cuz if not fresh it will be rubbery..
Kinilaw (ceviche) is an absolute treat especially with some San Miguel Light Beer and watching this prep is asmr for me. I wished I saw the ingredients he placed in the Polynesian marinade. As a Chef, you should start vlogging cooking, People will surely love your take on Filipino Food. :)

Filipino ceviche using vinegar and citrus, kinilaw, actually predates the Spanish arrival. Physical evidence was found in an excavation site dating back to the 10th century. Archaeologists discovered the remains of citrus fruits and fish bones that showed markings of cubed cutting. When Spanish explorers arrived in the Philippines, natives were already eating this style of fish, then called kilaw, cqilao, or quilao. In later documents, Spaniards described the dish in journals and articles.

OMG Jonathan you just love Bohol eh. There are at least 2 KINILAW ingredients that you guys didn't put in and these are GREEN TOMATOES and COCONUT MILK. I always remember when we make Kinilaw specifically there in Bohol we always put the green crispy tomatoes and coconut milk. Also we don't normally put garlic. Try it sometime. MAAYONG PASKO!
Kinilaw must be spicy- by putting chopped ginger, black pepper powder and /or chopped siling labuyo(chilli padi)- to cover up its fishy taste & smell aside from the vinegar/ lime(calanansi), of course
Coconut vinegar is a fermented coconut nectar from the coconut flower before it becomes a fruit, that's why Filipino kinilaw is better than ceviche lol. I only use coconut vinegar for my kinilaw. I can make you a better one with guso (seaweed), coconut milk, lots of hot peppers, and a little magic sarap! It's the secret ingredients lol. Btw try putting ginger, garlic, and lots of hot pepper in your coconut vinegar and let it store like that for at least 7 days before using it. This makes the super coconut vinegar 2.0! This is the proper vinegar to use for dipping your lechon and all barbeque meats.

After watching many videos, I've noticed the people in the markets are EXTREMELY friendly and talkative to foreigner vloggers, but to Filipino's many turn away from the camera. I think that would be an interesting experiment to try, have a Filipino go into a market alone and vlog and see the reactions, then a foreigner go into the same market a bit later and see the reactions. Either way it's enjoyable to see everyone having a good time. I wish you a Merry Christmas.
Its thesame with Filipino youtubers, I'm Filipino so I watch Filipino youtube. Filipinos will talk to the camera, they will even greet their friends who might watch the video. They're even more talkative when they can speak in their own language.
it actually depends in the energy and how you approach the people. I've seen awkward vloggers who does not know how to properly ask people to include them in their vlog, some are arrogant. But most Filipino vloggers i've seen are really just friendly, and it reflects to the people they are trying to include in their vlog.
I can tell if a RU-vid channel will progress or not just by watching it. You have this charisma to connect with locals. Just continue doing it and you'll get more subscribers. :)

Kinilaw is about eating a fish as raw as it can be. By marinating it, it cooks the meat by the vinegar. As long as all the ingredients are mix together with the fish, you can serve or eat the kinilaw right away and do not marinate the fish or it will not be called kinilaw... Eating raw fish could get you parasites. Tuna used for sushi had been known to carry tiny worms that humans may ingest. So as much as I want my kinilaw to be as fresh as it could be, I rather "cook" the raw fish by marinating it in lemon juice, vinegar, pepper, chilies, salt and onions. Better be safe than sorry.

I agree to one comment below that you don't have to marinate the fish that long. Once all the ingredients are mixed then they are good to go because the vinegar will instantly cure the fish meat. Also when the fish is marinated too long it becomes too soft and soggy and not anymore tasty.
