Story time: My Grandma used to say, “ if your chid-lins stink then you ain’t cleaned them right!” lol! She was a cook but was like a personal chef for the rich people way before personal chef was a thing! lol! She would go from house to house prepping and catering food for their bridge parties and dinner parties in the 50s,60s& 70s with no help. She was a cook but had the skills of a chef. Her soul food was always pretty and neatly plated. We loved her cooking but I wish we appreciated her even more because I feel like we had no idea how special she truly was. When I see how people elevate soul food today, I think of her. For her taste and presentation were top priority. I My grandma was ahead of her time.❤My grandmother used to clean chitterlings so long until they didn’t stink at all. Believe it or not. She would clean and sing her spirituals. Soak and soak those things over and over (I think with water and baking soda then water and vinegar) while being careful to not totally strip off the meat. Next she would cook them in a pressure cooker with her seasons and spices with celery and onion! She said that also cuts the smell. Then she would sautéed and also would use her own little mirepoix. Finally She would serve on a bed of rice and boy was it good! Her Chitterlings used to taste almost like chopped roasted tender pork shoulder. Full of flavor with awesome texture! It took her a couple days to prepare! Needless to say I do not touch chitterlings and haven’t since she passed away over 30 plus years ago because they smell terrible and I make sure I tell people if your child-lins stink you didn’t cleaned them right! RIP Grandma!❤

OMG, you are telling my story . My mom did chitterlings the same , took two days to clean . She would put green bell peppers instead of celery . I live in Florida so when I visit her in Georgia she would cook them sometimes .

I’m not even going to lie , when I was younger my great grand father used to cook them quite often and I would tear them up 😂🤣. He passed away in 09 and my grandmother tried to prepare some for the first time in 2010 and I almost died…. If you didn’t know what you were eating and they were done right chefs kiss 😂😂😂

As an African American woman who cooks soul food, I’m glad they featured greens (my favorite to cook), shrimp and grits, black eyed peas and cornbread, catfish and sweet potato pie. You MISSED fried chicken, red beans and rice, candied yams, GUMBO and many of our desserts. I do NOT like okra nor eat chitlins 😂.

Our ancestors ate them to survive. They had no choice in the matter. So they taught themselves how to clean/sanitize them, season for flavor, and cook them. They taste better than they smell but it’s definitely an acquired taste.

@@christinajones7696 I know that. Thank God I didn’t live during those times. That still doesn’t explain why people STILL eat them in 2024 🙄 idc how much you wash, clean, or sanitize or season them; I will never eat them unless it’s a life & death scenario 🤢

My family are from the deep south on the Florida Georgia line. They were sharecroppers. Look it up. If you don’t know what it is, I was raised with all this food. It is my absolute favorite. It tickles me when I see people try southern soul food and absolutely love it it’s what I was raised on. I love it. I share it when I looked up in Maryland. The people around me would beg me to bring different soul food things and yep I’m a white girl but I know how to cook! Today is my birthday, not looking for birthday wishes, but the one thing I asked my husband for was a catfish dinner with okra. Thank the Lord he came through. It was delicious. By the way, I true Southerners never put sugar in their grits ever.

Shout out to Sharon for pointing out the glossing over of our dark US history. I didn't know, as a northerner, what hush puppies are...as they aren't a staple here. I feel sick at the idea of casually throwing out my order for a side of "hush puppies" knowing the history of their origin. Damn.
