One thing I do when the matrix is extra thick is I take my rotary Dremel and use a 2” diamond coated wheel and use it as a saw to cut the rock in a grid like you’re doing and then pop it off by sliding a chisel in the groove and twisting the chisel. You can take off an inch or so of matrix off the entire side in a fairly short time.
