I remember trying biriyani the first time... My husband and I were staying at a small motel in St. Ignace, Michigan and an Indian family made chicken biriyani in the center courtyard of the motel. We sat outside our room (each room had chairs just outside the room for anyone who wanted to sit outside to relax or visit with the other families staying there) It was a beautiful, warm summer night with clear skies and lots of stars. Someone on the nearby beach was lighting paper lanterns so we could see those lifting off into the night sky. We watched this family cooking because the smell of the spices blending together was amazing and we were intrigued, especially since we had never experienced those spices before. We were drawn in by the scents and the music they were playing. It was like watching an intricate dance. There was so much going on, so many different pots. Anyway, when the biriyani was done, the family asked if we would like to try it. We gratefully accepted and were absolutely wowed by the flavor explosion. They followed the biriyani with baklava which they also shared. We had so much fun. This family was so generous and welcoming❤There was delicious food, conversation, community and happiness. It gave that quaint motel a festive atmosphere. This is one of my most vivid memories of my past. My husband and I have loved Indian food from that night on. I don't know if that family realized how much they impacted us, but even thinking about this memory makes my heart so happy!❤ It was a perfect night filled with wonderful food, music and fun

I took a course in Ayurveda, and learned that Indian food meals take the six tastes of food which are sweet, sour, salty, pungent, astringent, and bitter. And that when you include these six tastes in your meal not only is it healthier but it is also more satisfying to your appetite. So interesting what they use so many hundreds of years ago.

So so good! (Technically, saag paneer can be made with any kind of _saag_ or leafy greens - spinach, mustard greens, fenugreek, etc. - whereas palak paneer is specifically spinach. But in practice, saag paneer is usually spinach too in the West.)

I think I love the Asian cuisine so much because of the warm spices and sweet mixed with savory. Someone probably already mentioned the chutneys you had and the raita. The dark one is Tamarind, the green one is Hari chutney made with fresh greens/herbs like coriander (cilantro) leaves, mint leaves, cumin, ginger, garlic, lemon juice & salt. The red chutney you have might be pakora sauce, not sure. Definitely meant to gather up some of your saucy chicken or vegetable dishes, a little rice and you’ve got a perfect bite! Yum! One of my favorite Indian dishes to order is Rogan Josh. It's typically prepared with lamb, but you can usually get it with chicken instead (my choice). I always get an order of Aloo Paratha (flatbread with seasoned potato) which is great alone or to dip in your curry or raita, and for something sweet, Peshawari Naan which has coconut and usually some kind of dried fruit (I've seen raisins or cherries). Welcome to the wonders of Indian cuisine!

The trio of fritters are called pakoras, you have the aloo pakora, mixed veg pakora and palak pakora, You can dip it in any of the sauces. The dark watery sauce is called imli chutney and goes with everything. The sauces also go well with the samosa. As someone who has been cooking Indian food (North Indian style) for over 40 years there is really no wrong way when it comes to chutneys, I even dip my tandoori chicken in the mint/coriander chutney and it's amazing.

I love how Alessio absolutely polished off that Tikka Masala 😂 I’m British and over here Indian food, Curry in particular, is one of our favourite cuisines. Indian, Italian and Chinese food are probably the most consumed cuisines here, with Mexican, Japanese, Thai and Korean starting to become more of a thing too, but Indian food has a special place in my heart! I joined the military at 16 fresh out of school and throughout my training and beyond it became a tradition on a Saturday to go to an Indian restaurant, have a curry and a couple of beers, then go to a pub/bar and continue drinking before getting a kebab on the way home. Still now 22 years later if I go out to a restaurant 9/10 it’s an Indian place

@@alexanderwingeskog758 I watched something a while back where they were trying to trace its origins and they said it was a variation upon Butter Chicken that they adapted to suit what the locals wanted. However there is also a theory that it was a variation upon a dish from Bangladesh or Sri Lanka because they couldn’t get the ingredients to make the authentic dish in the U.K. in the 60’s/70’s … either way, although it was “invented” here, we can’t in any good conscience claim it! It’s a South Asian dish that was adapted for some reason and stuck … (that’s my political stance because I am absolutely not going to attribute it to one South Asian nation and start a war 😂)

@@NJTRAFit was invented in Glasgow by a Pakistani chef called Ali Ahmed Aslam. It was developed after a customer said that they liked the flavour of the chicken tikka but that it was a bit dry, so they made the sauce to go with it (including a can of tomato soup according to rumour), and the customer loved it so much they had to put it on the menu! Sadly Mr Ali passed away a couple of years ago, but his restaurant is still open for business. It's called Shish Mahal.

@@alexanderwingeskog758 Can you guys just stop with this shameless cultural appropriation? CTM is 95% the same dish as Butter Chicken and it was invented by Kundan Lal Jaggi in Delhi and being served in India for at least 15 years before the earliest claims of CTM's "invention" in Britain. You can't take a legendary dish switch out a couple of ingredients based on local availability and claim to have invented the whole thing. Not only have the British copied the dish, hilariously enough, they have even copied the dish's origin story (tandoori chicken getting dried out, so adding it to a tomato based gravy so it can be served later).

I'm Italian American, both sides. I've always eaten all varieties of food as I loved different flavours and cultures, from when I was a child. I naturally ate all types of cuisines: Italian, Greek, Mediterranean, Middle Eastern, Chinese, Indian, Thai, East Asian... I cook them as well. The Indian food is expansive just like other cuisines, so that food is particularly more northern, north eastern, Indian. Yes, the mango lassi is delicious, flavor and creamy texture is so good. I love mango, and coconut so coconut being in many Indian dishes and desserts is great for me. The samosa are delicious with the tamarind sauce(the darker) and Green chutney. It blends very well together as one is refreshing and then the sweet sour of the tamarind. Many cuisines have their assortment of fried appetizers, like Italian fritto misto and the Japanese with tempura. Though some may say that was Portuguese in origin. The naan is delicious when it is fresh from the oven, and it is a slight crisp but tender and then used for eating the various dishes. For me, I love the heat but not to where you cannot taste the food and you're going for pain😂. Fot me, I would do the ten because many Indian restaurants will be tame for American taste so I say to them, give me the regular level, like Indian, and go to the highest. Yet an 8 would have been a very good and not too much. Yet, everyone is different. The raita goes along with rice dishes like biryani, a rice dish which is very addictive. You may want to try Malai kofta next time which is very delicious as they're like dumplings in a rich creamy sauce with cashews. Very delicious. They are great dishes for the cold weather, as you mentioned Jessi. Gulab jamun is delicious as the flavour of cardamom comes through so nicely. They are my favorite Indian dessert. I also enjoy the rasmalai. For me different dishes have their unique flavours and they're all excellent. It just depends what I'm feeling like at the time. There are dishes from the south if you get to try. There is dosa, a flat crepe like dish that is filled and rolled and served with a coconut chutney which is so good. Then biryani, a rice dish with veggies and paneer or meat served along with raita to put on as you're eating. There is sambal and idli, rice type dumplings served with sauces and the sambal. Lots of variety. I'm vegetarian most of my life and vegan so Indian has many vegetarian dishes, even some vegan. It does take a bit to cook but once you get all the spices, it becomes easier.😢

I lived in india for 4 years. i fell in love with its food and to this day crave it. The samosas are best when hot, as are the pakoras. Think tempura vegetables. The bread is not eaten separately. Think of it as a spoon to scoop up delicious food. you use only your right hand and traditionally only fingers are needed. Try dosas, if you eat in. Masala dosas are light as feather huge pancake rolled around potato, pea, onion and served with a sambar or soup. my mouth waters just thinking of it. Vegetable bryani, a rice dish, so much better than plain white rice. For desert, try kheer, a type of sweet rice pudding with cardamom, raisins and cashew. Or carrot halva a carrot, raisin sweet with lots of clarified butter. So yummy every single thing

"Indian Food" is a combination of very many cuisine...the ones you tried are mostly from our northern part including Punjab, Haryana, Delhi, Western UP...then in Himachal, Jammu & Uttarakhand region you have more of pahadi touch in food...if you go towards Rajasthani Cuisine where you have more usage of millets, pulses & dairy products...i can go on and on, but every state in India has its own cuisine or some variations of common cuisine depending on historical food habits, availability of ingredients & seasonality...the cuisine from our southern parts is also very tasty & might be comparitively more aggreable to many, if you get a chance do try the authentic dishes like dosa, idli & vadas....if you like seafood could find many variations from bengal, maharashtra, goa, odisha, kerela or infact every one of our southern states will offer so many different tastes of even same or similar things....in fact there is an old saying in my India which means, after every 50 miles or so the language & food habits change apparently

The same applies to Italy, but on a much smaller scale, with as many variations as Indian cuisine. When people think of "Italian cuisine," they often think of Alfredo, meatballs, etc. However, that is neither authentic nor representative. Real Italian food changes with every province, and there are at least 107 provinces in Italy dating back to the Middle Ages. This means there are at least 107 different cuisines. As an Italian born who has traveled the country, I can attest that there are dozens of Italian dishes I have never heard of or tried. For example, during Christmas in Italy, there are probably 20 different traditions. Some celebrate Christmas on December 13th, others on December 25th, and many on January 6th. Each of these celebrations comes with its own unique food and drink traditions, unlike the standardized turkey, cranberry sauce, and corn typical in other countries. Italy became a nation in 1871, and Italian was not widely spoken until the 1900s. People often spent their entire lives within a 20-mile radius of their birthplace. Due to numerous foreign occupations (barbarians, Spanish, Austrians, Muslims, French, Germans, Hungarians), the Italian population is quite mixed. Without this diversity, serious inbreeding issues could have arisen.

Yeah, what they had, while it can be very good, is what is served (and often all that is served) by 99% of Indian restaurants in the U.S. Some of it is not authentic to what is found in India (it’s more British-Indian food, or Indian food adapted for non-Indians), and what they had is definitely not representative of the range of cuisines that can be found in India. India has regional cuisines that are at least as distinct as Italian regional cuisines are, and what they had is really only based on one or two regions.

Until well into the 90’s good Indian restaurants were not very common in the US (someone is going to say, “Not true!
