Carissa, Iwan & Frankie decided one night over a bottle of wine that moving from North Wales to Portugal would be a good idea. Within a month they were on the road to Portugal to find the perfect piece of land to call their new home. We picked up Albi the cat along the way. Subscribe to follow our journey as we turn an old stone barn into our home, and learn the ropes of looking after a piece of land to make an abundant garden and one day, our very own winery.

It is 7.30 a.m. here on Saturday here in Vermont where we are expecting up to an 8" snowfall , our second in a week. What a great way for me to have my coffee and home made raspberry and apple pie with. Love Ewan's skillful knife work as he preps for the mince pies ( yummm from this ex Yorkie) while you brew up home made mulled wine.It warms me to know that you both are safely home. Things taste so much better !

Your christmas preparations in your cozy kitchen lounge was absolutely charming. Altho the pies looked incinerated, i'm so glad they turned out delish below the burnt surfaces. (Truly, the only thing that went awry was the pizza oven had too much heat for your puff pastry pies, so your clever inclination to use that oven was nearly perfect!) Your mulled homemade wine looked a delight as well. I hope you enjoyed your christmas lunch or dinner. We've got lots of rain here too in northern california, and our extended fam are keeping to our own immediate bubbles as our parentals are elderly... but watching your preparations was very enjoyable. Love the light from the newest window, your lights & deco, the cozied up furkids, that you're altogether & snug. Beaming you warm hugs🤗💖. Keep taking good care ❤.

Merry Christmas!. I Mince pies. I thing you shoul use what we call Massa Quebrada. Just a tip!.. cook first on stove the mince on the stove, and them put on pizza oven on low heat. Its quick and you dont burn the pastry. " it looked delicious" Yummy. Thank you for sharing with us. Take care

Just an obvious suggestion, consider a toaster oven. The new ones can bake, cook and reheat. You worked so hard on the mince pies. The two of you were delightful making Christmas jolly.

Try cooking them in the oven after the fire has burnt out using residual heat. Or cover with foil to reflect the heat. Merry Christmas

Merry Christmas! We love mince pies too in South Africa. This week I also tried making my own for the first time. I saw a recipe in a magazine. I.just used a roll of puff pastry instead of making my own pastry. Lovely. But it should probably be made with shortcrust pastry.

Yes, I'm from Namibia. Lived in South Africa for a long time. I was going to say we pretty much all know what mince pies are. The British Empire stretched far and wide after all.

Nadolig Llawen both, enjoy your Portuguese festivities. You can get vegetable suet for mince pies by the way, usually that's what's in the ready made jars of mincemeat in the UK. Nicely incinerated pies by the way... 😋 Usually either shortcrust or puff pastry, but yours probably tasted amazing anyway. Lovely to see the animals all cwtched together. 🤗 X🎄

Well done for making your Christmas as Christmassy as you can.. We couldn't travel to our place in Spain this year, so we're spending it in Devon in an Air b n b.. picked some greenery with berries on yesterday, for a table decoration, and got some last minute Christmas decorations half price In a charity shop nearby. Made mulled wine and it looks good and smells good and tastes good. Just for future info, you can get a vegetarian suet for the mince pies. Also tops need pricking too, before cooking. We have a glut of mincers here if you want to pick them up 😉 On the subject of the shape of them, in Coventry, where I was dragged up as a child, they were traditionally triangular to represent the Holy Trinity, and were called Coventry Godcakes. Every day's a school day 😉😃 Cheers!

Try baking not in the open fire but when the embers are left, they provide s radiant and a stable heat. It would also help if you had a lid on your dish.

It’s a pellet oven so it cools down really quickly, I think a lid on the tin would have been the way, maybe some tin-foil?

Merry Christmas to you both! Really sorry you could not make it back to see family. The video conveyed warm and cozy Christmas spirit and I hope it felt that way for you. Wished the minced pies had turned out better for your enjoyment but it was nice to hear you laugh after ALL the recent troubles. I’m originally from the islands and really enjoy the sound of rain on a tin roof. ☺️ It’s nice that the other cats feels welcomed. I love the star shaped candle holder. Is it vintage? I really enjoyed the video and didn’t want it to end. 😘

Next time, just light the oven and let it warm up. You need a thermometer for the temperature and you add wood if you needed hotter or let it cool down if too hot.

We also enjoy Christmas minse pies here in South Africa. But we are in summer and it has rained but also very humid. The pastry is sweet with a sprinkel of caster sugar on the outside of the pastry.

In the U.S. at least, ours are in pie crust. Fruit mostly, same ingredients as yours. Here you buy a jar of mincemeat and put it in a 2 crust whole pie. My favorite, except maybe apple might be my favorite.

Oh bummer. You put sooo much hard work into this for it to burn. I feel so bad for you. I cannot believe you can laugh. I'd be tempted to cry. Yes, maybe the wine helped. Hugs. We have just pretty much ignored Christmas the last few years. I am old now and gave all my fancy Christmas decorations to my daughter who always "gets into" Christmas and does it up fancy. Hugs.

After seeing your preparation for the mince pie I went and got mine. Hope it tastes good. You should try and go to your closest bakery and get some pasties de nata it is a flakey pastry with a egg custard in the middle. It is the equivalent of the mince pie as a treat on Christmas Eve . I think mince pies and tarts are quite widely enjoyed. My mother made minced meat pies with meat and suet, and also with fruits. I couldn't get into the meat one, I thought it was heart attack material. Anyway, have a fantastic Christmas! All the best for 2022!

Merry Christmas to you both and to your pets. I felt so sorry that Ewan’s efforts with the mincemeat didn’t work out. I don’t know if you’ve ever heard of a Ridge Monkey. They are so versatile, particularly when you haven’t got an oven. Expawers, Sarah and Nick use it all the time as they do not have an oven. I thought if you made the mince pies as a turnover or pasty and put them in the ridge monkey you could turn the pan over half way through cooking and satisfy your craving.😄 Sarah has made nut roast and a full Christmas dinner using one. I do hope you get back to Wales in the New year. We live in the Southwest near Llanelli and my husband is a huge Scarlets fan. ❤️

With reference to the mince pies can you make the oven cooler 400 degrees seems a little high even for pizza lol. Also your new wood burner, can you move it to below the window and the smoke will go out then. Cooking more mulled wine on the woodburner sounds like a winner.

Hi, I am enjoying following your progress. May I ask a few questions? How did you find your land? Did you have red tape like planning permission or habitation licence? How are you finding the cost of building materials Portugal vs. UK? I love the fact you have so much resources on your land in terms of fruit and the ability to make your own olive oil. Hi Mike, we found it through a local estate agent, have a search in Portuguese in the area you’re interested in. We were lucky as the place already had a habitation licence, so no red tape as of yet, we haven’t had to ask for planning permission for any projects yet but we will be starting that process this year as we want to add a bathroom to the other side of the building and possibly add a second floor to the main barn. Costs seem to be about the same, some things are cheaper and some less so. Hope that helps!

Of course.. all we did was add mixed spice, cardamom, sliced orange and apple - that may have been it. We didn’t have any cinnamon otherwise that would have definitely gone in. Cloves are also a nice addition.
